Be honest!

These threads usually attract replies from busy mums saying ‘aubergine orzo with lemon chicken’ and I think ‘from scratch, at 5pm, with 2 hungry kids??’

Please let me know!

Home made “pizza” tortilla wraps with passata, mozzarella, tuna, prawns and oregano, take 8 minutes in oven and so easy!

Lasagna tonight, made from scratch even the pasta. I live making pasta and I’m retired so have the time. Son and DIL coming for dinner so made the effort

Chicken, cheese, broccoli and pea pasta bake. I didn’t pluck the chicken and make the pasta myself but it’s sort of from scratch insofar as no jars or packets beyond that?

I have half a cold roast chicken in the fridge. I’ll probably eat some of that with some steamed broccoli and okra. That’s pretty much how dinner is most nights here.

Zinger chicken burgers, hash browns and corn on the cob. Tescos own hash browns, frozen corn on the cob and the burgers were from the butchers. Nothing cooked from scratch by me, just thrown into the oven. Can’t be arsed cooking today, had a full on day at work and I’m tired. Dd11 is extremely happy with the offering.

Tesco hash browns are the best!

Warm beetroot and halloumi salad, on salad leaves with walnuts and pomegranate and a warm orange dressing. Nothing from a packet except the halloumi.

Meatballs from the freezer with jarred tomato sauce and spaghetti. I did cut some cucumber for the kids to make it "healthy" though. Cucumber saves many a meal in this house.

Well I just baked a batch of Anzac biscuits and home-made granola. As I’ve scoffed several biscuits and am home alone that may well be my dinner. So yes, dinner from scratch Grin

It’s a very simple lentil and rice dry dal type thing with a cucumber salad.It’s an Ottolenghi recipe with about half the ingredients.

Salmon and broccoli pasta. Salmon is leftovers from an oven cooked batch. Broccoli gets a quick par boil. Then stir into pasta with cream, parmesan and a bit of lazy garlic from a tube. Italian seasoning and black pepper. 25 mins from scratch. My husband is a star, if it was me, it would be pizza from a box.

Louisana cajun sausage skillet
sausages just finished cooking in oven
red pepper and tomatoes are just finished roasting, they get blended into a paste.
Then then rice, stock, onion, red pepper/tomato paste, various herbs and spices cook in skillet with brown rice.

Corn on the cob in a separate pan put on about 15 minutes after skillet

Takes about an hour from start to finish and a lot of that is roasting or simmering so I can sit at kitchen table listening to radio4, finalising a delivery order, wash-up, sort school bags, at the same time, once skillet served up most of the kitchen jobs are done as well.

Home made steak pie with sausages, shop bought puff pastry, home made mash, carrots and frozen peas. Home made apple and bramble crumble for pudding.

It was meant to be campfire stew with garlic bread and green beans but it’s not ready so one kid has had cheese and crackers and the other one had peanut butter on toast. Will probably give them yogurt and fruit for balance afterwards.

Home made chicken pie, roast veg, some sort of potato dish.
Leftover sponge pudding from Sunday.
Need to clear the fridge of leftovers so I reserve the right to include some weird additions Confused
