I had carrot cake with walnuts at a local cafe recently. The icing wasn’t the usual cream cheese frosting either, it was more like a cheesecake topping. Very yummy and a nice change.😋

The nawaab in levenshulme used to do blackjack ice cream. God that was nice.

Why is everybody going on about carrot cake (a shocking waste of perfectly good carrots, in my opinion)?

Date and walnut cake is the pinnacle.

You've got that the wrong way round. Walnuts are lovely and don't deserve to be hidden away in nasty carrot cakes

Take your carrot cake recipe and add canned and well drained pineapple tidbits. If you don't have that size option over there then just dice very small. But squeeze out excess juice using kitchen towel. I add about a cup of walnut pieces and run a knife through them to roughly chop. I also add raisins. Again, about a cup. Cinnamon, a teaspoon, maybe a bit more, but I like a lot. Icing is cream cheese (ie Philly) and I mix it half/half with butter, icing sugar to the consistency I like and real vanilla to taste. Maybe a half cup of cream cheese and a half cup of butter, then vanilla and add powdered sugar until it's how you like it. Sorry, I don't measure that. I like to make mine as a layer cake, but a basic tray bake with icing on top works, too. God knows I'm taking an extra spoonful. 😁

It’s absolutely delicious and my favourite. I wish it was easier to obtain in supermarkets rather than just in special ice cream cone places.

I love chocolate- actual chocolate, although tbh I can’t be doing with posh stuff.

But the tendency for everything to be taken over by chocolate really annoys me. When I look in the ice cream section in big supermarkets, instead of lovely fruit flavours, or things like R&R and coffee, it’s all variations on the chocolate theme.

Not sure about the raisins - but if anyone invents rum and fudge pieces, I'm in.

I love it. My favourite ice cream parlour in Malaga made the best. I ordered that one for many years but I can´t find this one as easily any more as I´ve changed areas.

I'm of the opinion that I like rum and raisin but it doesn't like me. Gives me indigestion, so I give it a miss.

Mint ice cream, on the other hand, is just not my thang

It always used to be a thing on our family seaside holidays that Dad had rum and raisin ice cream and Mum had tutti frutti ice cream. I'm quite sure they were performing being grown up and sophisticated and would probably have preferred a vanilla cone with a blob of "raspberry" on top like the children had.

It’s my favourite, I also love old Jamaica chocolate which is rum and raisin flavour, and rum and raisin fudge is the best flavour too!
strangely I don’t like the taste of actual rum as a drink!

My husband loves it he looks for it if we are on holiday, i don't understand what is wrong with him😀
