To do beans on toast once a week?

Doing a different work pattern soon and two nights a week will be a lot of pressure to pick up DCs (infant age) from after school, feed them and not end up putting to bed too late.

I can't cook from scratch these nights and realistically don't think I'll be organised enough to batch cook for both nights.

AIBU to give my kids beans on toast every week for one evening meal? I know it's UPF but at least it's some kind of veg and very quick. They'll be having a hot lunch at school and are pretty good at eating it.

of course. Completely normal. My older kids have beans and scrambled eggs on toast once a week. They also have pizza, chicken nuggets / fish fingers , sausage sandwiches, pasta pesto for tea once a week.
They have a cooked school meal. Simple and quick.

The slow cooker is your friend OP. Whack it on before work - dinner done when home.
Alternatively, DH and I had stir fry tonight. I timed it - 9 minutes from starting to on plates. There is loads you can do that’s quick without resorting to UPF.

Nothing wrong with it.

Although if you are bothered by it you could try batch cooking. Every time we cook we double the portion and freeze half for days when we don't have time to cook.

Our quick no-time meal is filled fresh tortellini with pesto. That’s another good one if kids like it. Or scrambled egg on toast.

Mine had that tonight (lack of both time and money). I used wholemeal bread, butter, beans & grated cheese with some cherry tomatoes on the side. Reasonably cheap, filling and all the food groups covered.

Spaghetti on toast
Beans and sausages on toast
scrambled egg on toast

but no YNBU - we regularly have toast dinners when were too busy / not hungry

I find slow cooker food very depressing. I'm not sure why, but I can never stomach it. Also mornings are Huge rush as it is!

None of my kids will eat stir fry.

It's not considered UPF if you use organic baked beans - or even use different tinned beans. I tend to mix it up with minced onion and whatever veg I've got around, then add the beans, which only adds about 5 min.

Could you batch cook pasta sauces like Bolognese into freezer bags/containers? Remove from the freezer in the morning and leave in the fridge, then just cook the pasta and re-heat the sauce when you get in?

We used to say that, too, when we were at the coal face of young, young children. Everybody fed, nobody dead.

OP beans on toast is perfectly acceptable as a tea.

Scrambled egg on toast with a side of beans
Beans on potato waffle (cooked in toaster - yes!)
Toast with lots of butter, then an extra piece with lemon curd on for 'pudding'

All different meals in this house!

We always do a beans on baked potatoe night . Or tuna. Or sometimes I pull something out of the freezer, I just try and use better chips or veggie nuggets so it’s not utter crap.

I don't have a slow cooker but believe you can cook jacket potatoes in them. Would this help in variation

I love toast so I would be in heaven, tuna melt is a firm favourite

This is the type of meal planning thread I approve of!

I've bent myself in crazy ways making ridiculous meals when actually, beans on toast is fab!
I batch cook when I can. I cook fancy meals at weekends but if I’m having a tough week, it’s shop bought quiche and beans, scrambled egg and cheese on toast, tuna pasta with fridge gravel.
Next week -
Monday- batch cooked bolognese out of freezer and pasta
Tuesday - Sharwood chicken tikka masala with dried out (not a culinary term, it’s just a bit dry) pitta and basmati rice
Wednesday - quiche and beans
Thursday - burgers, fries and frozen corn on the cob.
school finishes next Friday so tea will be whatever they want from just eat and lashings of gin for me!

Beans on toast is a completely fine meal once a week. Also you're training them to like a cheap easy nutritious meal for when they are students so win win.
