Accidentally made a massive lasagne and feel panicky

As title, really.

I made a vegetable lasagne this afternoon and it’s turned out much bigger than intended, with an estimated weight of around two stone.

Albeit very nice, it is rather rich for my taste, using cream cheese in lieu of béchamel, not to mention the secret layer of fresh basil leaves. It’s only me to eat it and I don’t think I can face it for some time after one more serving tomorrow. Freezer is full. Neighbours all vegan.

The huge lasagne is cooling off in my now extinguished oven while tough decisions are made. Feeling a bit hot and panicky about it.

What do?

Play freezer Tetris - portion it into single servings and squeeze it into the corners.

I usually have a bag of ice that one of my visitors insists on buying and uses maybe four cubes from it. They absorb smell quickly so can quickly be dumped. Makes a nice bit of space.
If there's a tub of ice-cream with not much in move it into either a smaller container or a freezer bag, again, space. When I buy things in boxes I often remove the contents into freezer bags to save space.

I love a bit of freezer tetris. It's rare that I can't fit something in by moving stuf around, even if it means I have to polish off 3 ice pops (or something) to make that vital bit of space.

One Christmas I made a Lorraine Pascal Doorstep Cheesecake. I realised too late that the clue was in the name.

We were all a bit in awe (frightened) of it.

The sacrifices we have to make! I once found half a tub of Ben and Jerry's which I doubted its suitability for my grandchildren being as it was quite old. An extensive tasting test showed that it would have been fine for them.

But my topping was always cottage cheese, mixed with an egg and cheddar and mozzarella, it puffed up and was really cheesy.

You topped a lasagna with cottage cheese? What is wrong with you? Cottage cheese has no place existing outside of a miserable 80s diet.

I have never attempted to make a lasagna, it always looked much too complicated for my liking. I cant fathom how anyone can make one accidentally. 🤯

You've not completed freezer tetris until you've taken all the ice creams and pizzas out of their boxes, moved the ice cubes from the tray to a sealy bag and reshaped the bags of frozen chips and vegetables.

It's amazing how much room can be found in an apparently full freezer if you really put your mind to it.

But I know how the OP feels. I got a TGTG bag yesterday and was saddened to see that none of it was suitable for freezing so will need to be eaten today.
