I love soup and it's a staple in my home particularly in the winter. Today I made a thick root veg soup and we had it with crusty bread. It's just so quick and cheap to make and there are so many different options - thin, thick, meat, veg, spicy, creamy.............

Do you make/eat a lot of soup?
What are your favourites?

Our family staples are veg, minestrone, tomato, chicken and sweetcorn and leek and potato.

YANBU. There’s some amazing looking soup recipes I keep saving on Pinterest (I’ve yet to make a single one though 🧐).

I love soup during the cold winter months and usually make a batch on a Sunday for the week ahead. This week we had broccoli and Stilton and I’m planning tomato and red pepper for next week. My favourite is my leek and potato soup with lots of drably ground black pepper. Delicious!

My top tip for veggie soups is to use a potato masher and mash them rather than blend, gives a really nice texture as I’m not keen on silky smooth and saves having to chop the veg really small.

Oh, I like this idea thanks!

a parmesan rind in a soup is a great addition while its simmering///i put them in the freezer to put them in soup/

I absolutely love making and eating soup! Ideally with lightly toasted fresh sourdough, mmmmm! I make my own stock, the local butcher sells free range carcasses for £2 for 4 and I save the stock vegetables to throw in the soup too.

current favourite recipes are fire roasted tomato (from Pinterest)

roast butternut squash

spicy black bean

Excited101 · 19/01/2024 09:25

@BarrelOfOtters that’s part of the tomato soup recipe, it’s life changing!

I love soup! In 2020, I made soup every day for the whole year. It was brillant during lockdown and stressful periods as it gave the whole family something to normalise us and a reason to have lunch together every day. Also my DH was able to take a flask of soup to work rather than worry if cafes/shops would be open.
Stilĺ make soup both days of weekend plus in week if folks WFH.
Soup is great!
I did follow recipes in that year but mostly just make it out of what's in the fridge or left-overs from previous nights dinner. As The Cat in the Hat says "you can make soup out of anything"😁

Butternut squash, chilli and creme fraiche.
I never make stock - vegan Bouollion is my got to powdered stock, never veggie oxo.
I also have a lot of retro-based love for Heinz cream of tomato soup, which was given to me whenever I was sick as a child.

There's a slimming world recipe for soup that tastes just like Heinz tomato soup.

If we have a roast chicken I make a big pot of stock and freeze it in takeaway boxes, i.e. portions of a pint or so. Usually get four boxes so enough for a few soups.

Hi, love soup. Got a lovely recipe from a friend of a friend last week and they recommended a stock to use and for the life of me I can't remember the name. It was in a yellow and blue strip tin and I think it started with the letter B. If anyone knows the name please let me know. Thanks

I'm loving this thread, it souperb (sorry)! I really want to make more soup and have a soup maker but rarely use it. Is it better to make it in a soup maker or on the hob?

Counterpoint: it's boring and I hate it

Grin

kidding ... sort of. Unless it's almost a stew I get bored of eating it halfway through. I have a few I make and a few bought ones I'll tolerate but is it as good as a sausage baguette? No.

I'm pretty much with this. I make loads of it, because DH and family love soup. And it's cheap.

But to me, it's a hot drink. However much veg etc I put in it, there's nothing to CHEW. The best bit is the bread with it - but I'd rather just have a sandwich. I never feel full on soup (unless I eat huge amounts of bread with it).

Love the pun. Both are good. Great thing about a soup maker is you can throw everything in and come back when it’s done.

Last night I had a MIL visit sprung on me today. She was coming between 11 and 12 so not offering her lunch wasn't going to work. I made a pot of lentil and the bonus is that there is enough left for me to take to work at the beginning of the week. I have tubs of homemade stock in the freezer but I used stockcubes to avoid the complaints that I haven't drowned in salt.

My go to soups are:
Cauliflower
Potato and leek
Tomato
Carrot and rice
Carrot and coriander
Scotch broth
Minestrone
Parsnip and apple
Chicken and rice

Some soup is chewy:

Tuscan bean
Mulligatawny
Soupe au Pistou
Smoked haddock chowder
Cock a leekie
Chicken Thai green curry
Ramen noodle soup

Hatty65 · 20/01/2024 19:55

@Mirabai It's not chewy enough for me! 😀

I know what you're saying, but I like beefburger and chips. Or a bacon baguette. Something to really get my teeth into.

Chowder, mulligatawny etc - whatever you do everything is still soft in them because it's been simmered in liquid for a length of time.

LakeFlyPie · 20/01/2024 20:01

Mary Berry's quick tomato soup is a winner 🍅

What about Ottolenghi’s lamb meatball and dumpling soup?

I always like soup accompanied with crusty bread, with cheese or pate or cold meat. Is that not chewy enough?

TipulophobiaIsReal · 20/01/2024 21:25

At that point, the soup seems superfluous TBH. Why spoil a nice sandwich or cold spread with extraneous hot flavoured water?

Oh no definitely not. I don’t like sandwiches - too much bread.

It’s all about the hot soup with pate on a bit of crusty bread together.

(I don’t know what kind of rubbish soups you make but they’re nothing like hot water).

TipulophobiaIsReal · 20/01/2024 21:36

Soups are liquid. Unless you're maybe making some kind of nasty mercury-based concoction, they're hot flavoured water.

Mirabai · 20/01/2024 21:46

They’re liquid but they don’t taste of water and they’re thick.

You could call all alcoholic and non alcoholic drinks cold flavoured water - but they don’t taste anything like water and some are very strong.

You could call humans tepid water as we’re 60% H2O.

Tilllly · 20/01/2024 21:54

I've found my people!!!

Tomato
Onion
Carrot and coriander
Butternut squash and red pepper

Need to figure out how to make minestrone

And how to make my own stock
