I love soup and it's a staple in my home particularly in the winter. Today I made a thick root veg soup and we had it with crusty bread. It's just so quick and cheap to make and there are so many different options - thin, thick, meat, veg, spicy, creamy.............

Do you make/eat a lot of soup?
What are your favourites?

Our family staples are veg, minestrone, tomato, chicken and sweetcorn and leek and potato.

Made leek and potato yesterday (and had it again today) super quick and it was absolutely delicious - so good. I love soup - I should make it more often! Not keen on minestrone or any pasta bits - other than that I'm all in!

therealcookiemonster · 17/01/2024 23:11

I find soup a great way to get those veggies in during the colder months. I usually always have soup for one of my meals or snacks from October- marchish

Kitkatcatflap · 17/01/2024 23:13

Our family love soup - we have started Soup Mondays. A demand from the 16 year olds. Soup and garlic bread. Favourites are:

Blue cheese & Stilton
Leek & Potato
Turkish lentil
Spicy tomato & lentil
Taco soup

This week I made the Mary Berry tomato soup made with sun dried tomatoes. It was so quick and delicious.

londontonyc · 17/01/2024 23:42

We had Jamie's chickpea and chorizo tonight, packed with spinach and fresh tomatoes so makes me feel healthy. With crusty baguette and butter - lovely!
Delias black bean soup with black bean salsa is a favourite here, and her bacon cabbage and lentil. Just wish the kids would eat it too!

Sushimad · 17/01/2024 23:53

I love soup and stews, and I also regularly make my own stock, so I always have some on standby in the freezer.

Recently, I've made turkey, potato and veg soup and pea, lentil and gammon soup.
I'm planning to make a broccoli and Stilton soup this weekend, and will also make one with sweet potato and coconut as that sounds delicious.

My go-to recipes are:

Roasted tomato soup
Spicy Red pepper soup
Creamy chicken soup
Chicken and pearl barley broth
Pea and ham soup
Lentil soup
My "Anything Goes" veg soup, which makes use of any peelings or veg going soft/limp. May also contain meat if there's any leftovers that need using up.
Roasted, Spiced Cauliflower soup

I love it and always have some in the fridge, homemade.

My favourite is a lentil and veg soup seasoned with cumin and paprika, made with puy lentils, onion, lots of garlic, celery, and potato.

I also love carrot and ginger soup. Great for a very cold day.

Plus of course minestrone, and I love split pea soup too.

Go on then, who makes their own stock to use in soup?

I do - I use chicken necks or boiled carcasses from a roast or rotisserie seasoned with onion, garlic, rosemary, and parsley stalks. I always have several small pots of stock in the freezer.

mathanxiety · 18/01/2024 00:57

The lentil soup also has carrots...

cardibach · 18/01/2024 00:57

I like soup, but I’m starving again 20 mins later even if it’s full of protein and eaten with a stack of bread and butter. It’s like it turns everything to air.

thaegumathteth · 18/01/2024 01:42

I love soup but don't have it often because nobody else likes it in our house. Don't have a big enough freezer to store much either.

I'm pretty plain with the ones I make though - all veg / scotch broth/ potato and leek type things and they have to be chunky apart from fresh tomato soup which can be smooth.

Notimeforaname · 18/01/2024 06:56

Blue cheese & Stilton

So isn't that just blue cheese soup?

BarrelOfOtters · 18/01/2024 07:10

Lamb broth is a bit of a thing where I live….like that when out for lunch. Never managed a decent one at home.

like a chunky soup and often make bottom of the fridge lentil soup at the weekend.

also love a ramen, pho or udon soup.

but it’s a lunch thing…and never for a starter in a restaurant.

allthecakesinalltheworld · 18/01/2024 07:46

Roasted chilli, pepper and tomato
Tuscan bean
Leek, broccoli and Stilton
Chicken noodle

Chocladore · 18/01/2024 07:56

I’ve had soup everyday over these past few weeks for lunch at work, all Heinz tinned, so I’m following this thread as your recipes sound delicious!

I did make soup when DS was weaning, red lentil always a favourite, frozen in ice cube trays of course😆 first time I used the stick blender got a bit messy! I’m not a domestic goddess!

How do you all blend your soups? Best blender recommendations please as I fancy giving it another go! I LOVE garlic and although I like chilli I don’t like spicy soups, prefer hearty veg/lentil/tomato/pea with a huge sprinkling of black pepper to serve!

43ontherocksporfavor · 18/01/2024 08:00

I have a stainless steel blending stick off Amazon. Detachable whizzing end is important. Also keep the whizzing below the surface to avoid mess. I tilt the saucepan if it’s not full.

43ontherocksporfavor · 18/01/2024 08:02

@cardibach i think it was proven that soup stays in your stomach longer , keeping you full for longer which isn’t what you would think and I agree but obviously doesn’t work for you.

LegallyBrunette01 · 18/01/2024 08:07

Absolutely love soup, it's so comforting and delicious. A firm family favourite is Finnish Salmon Soup, which I got from another mumsnetter on a different thread about soup for dinner.

Ohyeahwaitaminute · 18/01/2024 08:12

I love soup. DF used to make Sunday Soup and it was different every week!

It’s my go to food in the winter.

There was some guy on Insta a few months ago talking about minimising food waste. He suggested that every time you’re about to chuck onion skin in the recycling, to chuck it in the freezer instead.

So any carrot, celery, leek, onion that’s still on my chopping board- end bits - tough leaves- gets chucked in a bag in the freezer. If I have any chicken bones they go in too.

When the bag is full, I chuck it (still frozen) all in my pressure cooker ( but you could use stovetop method). Fling in bay leaves and a few peppercorns and top with water.

I can get away with using simpler soup recipes as the base stock tastes so good 😊… and it makes me feel dead smug too 🤣🤣🤣

Alsonification · 18/01/2024 08:21

I adore soup. My fave is mushroom soup which is so easy to make & so tasty.
I also love courgette & almond soup kevindundon.com/recipe/wprm-courgette-almond-soup/
Absolutely delicious.
There's also nothing nicer than dipping a cheese toastie into tomato soup!

cerisepanther73 · 18/01/2024 08:24

I rember trying courgettes creamy soup once after a good walk in the Gower with a ramblers type of thing i used to be involved with...

Bargello · 18/01/2024 08:24

Not a soup fan I'm afraid. It seems it was something I ate a LOT of growing up with my mum making loads and every time I went to either granny it was always soup for lunch.

Nowadays I'd MUCH rather have something else, anything else for lunch. Would never choose soup as a starter in a restaurant and never make it for myself. DH likes a can of soup with toast but the kids aren't fans either.

Mirabai · 18/01/2024 08:26

Love a good soup, make them every week.

Currently in my fridge are:
Jerusalem artichoke
Leek and watercress
Mushroom and chestnut

Mirabai · 18/01/2024 08:29

I used to use my Magimix but now I just use a handblender in the saucepan - much easier. For a really smooth texture Vitamix is good.

Go on then, who makes their own stock to use in soup?

Me. Soup is a huge thing here in Scotland. Every newsagent, balers and butchers that has a takeaway service sells soup to go with filled rolls. My cousin has a little takeaway that is really popular with the trades, she goes through gallons of soup every week. Lentil is the best seller. My favourites are curried marrow and carrot & orange.
