to think soup is underated but amazing!

I love soup and it's a staple in my home particularly in the winter. Today I made a thick root veg soup and we had it with crusty bread. It's just so quick and cheap to make and there are so many different options - thin, thick, meat, veg, spicy, creamy.............

Do you make/eat a lot of soup?
What are your favourites?

Our family staples are veg, minestrone, tomato, chicken and sweetcorn and leek and potato.

Soup is my best friend! I make a giant pot and freeze into portions. I give it to friends and family and neighbours. Every single soup has a tin of white beans or lentils whizzed into it for protein and thickening.

Since Christmas I've made:

Roasted tomato and red pepper
Tomato and basil
Tomato and black bean
Creamy vegetable
Curried parsnip
Broccoli and Stilton
Roasted cauli

Tomorrow I'm doing fennel.

I want to be known as the soup lady.

Mmm I was just daydreaming about soup.
Cream of tomato please, but homemade, lots of garlic and pepper with buttered crusty bread. Please.

@chickentikkasoup I can't do quantities as I tend to play it by ear, but roughly:

Peel and chop equal quantities of butternut squash and sweet potatoes, toss in olive oil, smoked paprika and salt and bake in oven until soft and lightly singed

Chop a few onions, lots of garlic cloves and some red chillies (depending on how spicy you like it) and fry them in butter until they're really soft and starting to brown

Add the onion mix and the veg to a big stockpot and pour on stock until the veggies are just submerged, then add a good squeeze of tomato purée, a good whack of chilli powder or flaked chillies, a tin of coconut milk, a squeeze of lime juice and a whole bar of creamed coconut (cut the solid oil bit off)

Bring to the boil, stirring, then blend. Taste it and add onion or celery salt if it needs it.

I have a Covent Garden soup recipe book. It has a recipe for each day of the year. I have made a lot, and they have all been amazing.

Soup is very underrated.

I'd forgotten about the broccoli soup. I add roast cauliflower and Stilton to mix it up. I also add a few splash of lemon juice to broccoli soup which makes it super tasty.

Haven't made cream of celery since the summer, kids not keen but I love it.

I’ve made a few soups this month. Found a great sweet potato and beetroot, but also use beetroot for borsch which is amazing. Also made a butternut squash one.

I need to branch out a bit soup wise because I also love anything with daal. My favourite soup is French onion but I’ve never made it myself.

Massive soup fan and for the parsnip lovers… parsnip and apple is delicious! Made curried parsnip and swede soup with a bit of ginger last - that was good winter warmer. My fridge drawer always has random leeks and celery for soup making.
And I have a huge vat for cooking soup in!

Go to recipes:

curried parsnip
parsnip and apple
butternut squash and sage
roasted tomato (and red pepper)
broccoli and stilton
cauliflower cheese
watercress and potato
beetroot
lentil and bacon(or Facon)

best served with fresh scones or toasted pitta!

My stick blender is my favourite gadget. This year so far I have made leek and potato, spiced parsnip, and carrot and sweet potato. We have so much snow here at the moment so the pot I made at the weekend has been very welcome!

Got to admit, I always have to hide that slight sinking of my heart that happens when someone says to me, "Soup okay for dinner?" Because, well, yeah, it's okay. But only okay. It always feels like a bit of a disappointment. A drink, when I was hoping for food. Filling up on carbs with a bit of flavouring to cheer it up, rather than a main event with a side of carbs. Stretching out ingredients and making up the difference with water and bread. A starter, filling in for a main. A single, generic, mingled flavour of nothing in particular, mouthful after mouthful. All these "…Oh. Okay" type of thoughts. It's entirely my hangup, I know. It's fine. Not every meal can be exciting to everyone.

(And I know there are many soups out there that flout one or more or all of these thoughts— these are just the feelings that always come to me when I hear "Soup okay?")

(It really doesn't help when you're gluten free, either.)

Yes! Soup is delicious! I make mine in a soup maker. Always have frozen veg ready so it's economical and easy. So warming in the winter or after a cold water swim Grin

Pea & garlic and spicy corn chowder are my current go to faves; they’re so quick to make, brightly coloured, comforting, nutritious and delicious! Now just to stop eating great wedges of tiger bread and salty butter with them…

Leek and potato is lovely too.
Soup is so easy and cheap to make and perfect in this cold weather.

I live in Florida, so just got home from work and threw together a pot of seafood chowder. It’s been colder than usual here and there’s nothing like a hot pot of soup! I love to make an “unstuffed pepper” soup, or chicken with gnocchi or chicken noodle. Funny that I had just sat down with a cup of chowder and saw this thread.

I have to stop myself making spiced parsnip soup too much as I absolutely love it. My second favourite is Jerusalem artichoke.

not a fan of meat soups much.

I'm in the position of only being able to eat very soft foods at the moment and some of those can be problematic too. Soup is what keeps me going and I LOVE it. I loved it before but sometimes a tin of Baxter's cream of tomato soup is like the food of the gods to me. Also M&S lobster bisque which is the actual food of the goods. All that's missing is bread. I wish I could have bread but at least I can have soup!

  • spring veg
  • buttery tomato with sweet potato
