to think soup is underated but amazing!

I love soup and it's a staple in my home particularly in the winter. Today I made a thick root veg soup and we had it with crusty bread. It's just so quick and cheap to make and there are so many different options - thin, thick, meat, veg, spicy, creamy.............

Do you make/eat a lot of soup?
What are your favourites?

Our family staples are veg, minestrone, tomato, chicken and sweetcorn and leek and potato.

I do pretty often - it freezes really well.

Don’t tonight - used the M&S frozen ‘rounds’ of chicken bone broth.

I am a big big soup fan. Personal favourites are red lentil and tomato, French onion, watercress, brown rice and chicken. But basically I can, and will, turn anything into a soup…mmmmm

Love soup.
Make it all year round but yes, it comes into its own in the winter.
My favourites are
broccoli,
Jerusalem artichokes
cabbage

I don’t make my own stock as I don’t use stock. I fry onions, herbs, garlic mixup depending on the soup.

If I want it thick I add blended lentils or tofu or blended beans

Jamie Oliver Thai red curry souo.

Put cubed squash, whole chicken, coconut milk and thai red curry paste in a slow cooker for about 5 hours or until cooked.
When cooked, remove carcass. peel off meat and put back in soup. Serve.

Tonight's was kale and potato. I actually don't like kale but it's OK in soup

Whats the recipe please as I always find kale overpowers soup
Any hints would be appreciated as greens are so good for us

I make a nice leek and potato soup and sprinkle chopped gammon into it, always make enough to do a couple of portions for the freezer.

I'm not slim, but then I do have chunky bread and butter with it or a toasted sandwich.

I am one who absolutely believes in the therapeutic properties of soup. I think it helps bump up your temperature a bit and provides essential fluid and electrolytes. I just dropped in some old-school chicken soup to a friend who is very sick with Covid. When I am unwell, my happy place is a bowl of Vietnamese Phõ or Thai Tom Yum/Kha Gai. I try to have some kind of soup in the freezer for days when I’m too tired to be bothered cooking or shopping. Tomato soup was the first thing my kids asked to be shown to make when they were learning how to cook.

Think it depends how much bread you eat with it, whether you lather the bread with butter and those deep fried croutons are a killer.

I like a good broth. Clear, sparkling, fragrant... Beef bone broth. Chicken essence broth.

More fussy about soups. I feel like 75% are just okay, 25% are something I notice. Noting down any interesting sounding ones from this thread!

I am not a big fan of soup, or 'wet' dishes in general. I make Leek and potato occasionally and I always enjoy the first bowl but i get bored of it really quickly. I would never have it in a restaurant, too dull imo. I really, really wish I loved it though.

I make industrial quantities of soup, as DH and I basically live on it when the adult dc aren't here. I batch cook and freeze it in portions... have 62 pots of soup in my freezer right now 😂

The ones I make on autopilot are:

Tarka dahl
Pea and ham
Chicken tom yum
Chicken and mushroom
Potato, chicken and leek
Mulligatawny
Sweet potato, squash, coconut and chilli
Tuscan bean
Broccoli and Stilton
Red Devil (tomato with 4 different types of fresh chilli and smoked paprika)
Scotch broth

I bloody love soup. We take big flasks of it when we go out as well.

Could you please share the coconut soup recipe please? It sounds yummage

@Justpontificating i have some spinach in the freezer and I just add a block or two to each portion when I reheat the soup. Not all of us like it so it saves making different versions.

I do a super easy curried butternut squash and sweet potato soup, so tasty. Roasting the veg and the garlic first makes it extra delicious!

I love soup.
I had broccoli and Stilton soup and a roll for lunch today and it was wonderful.

If I feel a bit run down cream of tomato is pure comfort, I've eaten it my whole life and it makes me feel better.

I'm a relatively new convert to soup but I'm definitely sold on it now.

My absolute favourite is Thai green curry soup with leeks, spinach, a potato, curry paste, coconut milk and stock - yummmm.

Also sweet potato with ginger and a bit of chilli, also yum.

kidding ... sort of. Unless it's almost a stew I get bored of eating it halfway through. I have a few I make and a few bought ones I'll tolerate but is it as good as a sausage baguette? No.

You need seeds toasted in paprika and turmeric on top

My spicy sweet potato and coconut soup:
fry an onion, garlic, add a few sweet potatoes cubed , chilli flakes and ground cumin then pour in a tin of coconut milk and add a stock cube( veg or chicken) and depends on your preference some water to make thinner. Simmer for 20 mins then blend with a stick.
Sweet potato makes it so velvety.

Yes, I love a soup thread.

Mushroom and garlic soup for us tonight. With a cheese toastie. Absolutely delicious.

I make stocks. One of the best reasons to have a roast chicken. Also do a veg stock and use ham hock for lentil and pea soups.

We have soup at least twice a week in winter. Minestrone at the weekend for us. Loads of beans and cavolo nero and I've a Parmesan rind to season it.

Our other favourites are;

Lentil
Pea and ham
Tom Yum
Chicken Noodle
Chorizo and chickpea
Roast tomato and red pepper
Potato and leek
Sweetcorn chowder
Courgette and pea
