I've been working overtime today, exhausted, feel like shit.

My 3 year old had a plate of corned beef, cheese and sweetcorn for his tea.

Did I just win the award for most 'that'll do' tea?

He quite enjoyed it tbf! He asked for more.

Ready for today to be done 😵‍💫😵‍💫😵‍💫😵‍💫

(Bread or crackers and cheese, followed by a piece of fruit, has been lunch since my childhood . Variations involving rolls, sliced ham and either lettuce and tomato (summer) or soup (winter) are possible, but not necessary. It’s unusual, but by no means unknown , to serve exactly the same for supper)

Choc ice and chips is at least more appetising than "shite and sugar", which is what my mum offered whenever someone asked what was for dinner Grin

I couldn't be arsed earlier so my lunch was a few slices of ham straight from the packet and two clementines.

No it's not. I love corned beef! In sandwiches... or with chips and pickled onions... corned beef hash...

You forgot Corned beef pie. Other wise known as Corned Dog here Corned beef is staple in our house, I usually have two or three tins of it in.
My legendary corned dog pie is often requested for parties, buffets, or just for the hell of it..
Right, keep this under your hat…I cheat. I use ready made pastry mix, (not the ready rolled stuff, even I don’t go that far)
Tin of corned beef,
Frozen mash ( life is too short to be peeling, boiling and mashing spuds when Tesco do it all for me)!
Frozen onions (same as above)
I don’t skimp on the corned beef, the full tin goes in.
The pastry is blind baked, no soggy bottoms in this pie.

As for CBA meals, I’ve had the odd slice of bread and peanut butter (no allergies needless to say) for lunch lately.

DH and I, on our honeymoon in Italy 20 odd years ago, went to Verona for the day; it was baking hot, we didn’t fancy lunch so bought ourselves a chunk of watermelon each from the market. Absolutely lovely.

I also have memories of student celebrations where ‘lunch’ consisted of a shared bottle of cava and a Mars bar. Those were the days. 😂

SIL wins it for me though, with breakfast boulders for 2 year old DD when her little brother was born. And that was fine by me.

When I was a kid my mums go to can’t be arsed tea was a tin of stewed steak in gravy, thickened with bistro granules and poured over new potatoes with peas.
Food of the Gods that. I still crave it as comfort food now 😂

I’m just here for the posters saying “I know what you mean! Last week I was so lazy I just gave the children a 3 course supper of smoked salmon roulade, beef wellington with slow cooked duck fat potatoes, and a tarte tatin. Shamed to admit I bought the potatoes from the shop although everything else was homemade including sourcing the duck fat from our ladies in the garden. Feeling so ashamed of cutting corners instead of our usual 8 course tudor banquet! Lol!”

DS 2. CBA lunch (he is 20 and so I am not making him lunch anymore!)

Chicken tikka masala frozen ready meal…he thought it looked a bit small and so added a can of tuna. Microwaved it. Ate it standing up right next to the microwave… he couldnt be arsed to even cross the kitchen and sit down 🤣

Ooh, I always have a can of Aldi or Princess corned beef lurking in the back of the cupboard. 😋 Home & Bargains do lovely vacuum packed corn of the cobs that stay fresh for months. Another great standby.

Previous posters mentioned various versions of Corned Beef Hash. Mine is left over potatoes or mash, corned beef, onions, gently sautéed in a pan until the bottom is browned, it’s then flipped over to cook the top , it comes out like a pp said, crispy bits, soft, squishy bits,, it’s served with baked beans.
I do a corned beef stew,: corned beef, onion, spuds, turnip, carrots, celery, leeks, any veg really simmered in gravy stock, Sometimes the potatoes act as a thickener.
Comfort food in winter.

I literally just cut up avocados for my kids when I CBA with dinner. I figure they’re relatively nutritious… we have avocado for dinner at least every other week.

Sometimes, if I’m willing to do dishes afterwards, I blend it with frozen blueberries and baby oatmeal and call it “homemade ice cream” . They love it! 🤢😂

@SeaToSki that made me laugh out loud! I have a 16 year old. He once decided to make a ‘snack’ so started with a pot noodle, began to add a tin of beans, realised it wouldn’t fit, poured it all into a pan, stirred and then ate it from the pan! I was hoping he might become more refined soon, you’ve worried me now! 😂

The mushed up stuff is my kind corned beef hash!

Boil potatoes, carrots, onions, stock cube ect.. add corned beef, must it all together, crisp it up a little bit serve with some crusty bread and brown sauce... Perfect.

That's the kind I make. Potato hash I guess

My DC went through a massively fussy stage. When I was in tears at scraping carefully planned healthy dinners into the bin yet again, I decided if they wanted spaghetti hoops on toast every day, they could have it. I got reduced sugar tinned pasta, wholemeal sliced bread, grated some cheese on top and gave them peas, carrot sticks etc on the side. They probably had tinned spaghetti on toast about three or four times a week for a few months.

Your dinner sounds inspired by comparison!

It sound like a proper meal to me; 2 colours, had protein, vegetable and dairy.

In our house egg soldiers makes a regular appearance, which takes all of 5 minutes with an egg cooker.

Not from this country, I have never had corned beef. What does the “corned” mean?

Going by some of the descriptions, crispy on the outside and soft in the middle, served on carbs (potatoes) with onion gravy….that’s not so different from sliced foie gras, fried or seared, served on a mini toast with onion chutney/caramelised onions!!
