Clotted cream

No clotted cream in our local M&S left today 🙈 my scones will have to have butter on them tomorrow. Think M&S should have foreseen mad rush for clotted cream and stocked up. Devastated. AIBU? The only other local shop I have is Aldi so will walk with baby and try them later.

xsquared Thankfully I'm off tomorrow but back in on Saturday. It was absolutely heaving today and like a lot of public facing services we've noticed a real decline in customers behaviour since the lockdowns.

It's pretty easy to make. Couple of large cartons of double cream. Shallow dish, bake for 12hrs on low leave to cool. Proper job clotted cream👊

Keep the mixture stickier than you think it should be. Only lightly knead and don't roll it out too thin.

I'd whip up some double cream and serve with sliced strawberries. There are of course those who actually prefer butter.

Couldn't get any,tescos subbed it for whipping cream,tried other places,all out of stock.
Whipped up the cream,was yummy.

I'm not doing anything about the Jubilee so don't know what's involved but, genuine question, what is the significance of scones and cream in relations to the Jubilee.

I was somewhere the other day and we were given scones and cream (Jubilee related).

Don't get me wrong, scones with clotted cream and strawberry jam is the food of the gods but is there some particular reason for eating them at the moment?

We had the same issue but managed to get one in a smaller corner shop - I guess nobody else thought to look there so maybe try some non chain shops

I was going to make a jubilee Swiss roll but my tesco delivery didn't have ground almonds. Everything else arrived so I've got flaked almonds, eggs, butter and whipping cream what will I do with those? Maybe I'll have to bake some scones and serve with whipped cream - done it before and yes it's different to clotted but still tastes lovely, especially with a different type of jam (blueberry or blackcurrant).

If you have a food processor (I use a stick blender with a grinder attachment) you can make your own ground almonds with the flaked ones.

It was a bit of an epiphany for me when I realised that. As well as grinding down almonds, I've also made my own caster or icing sugar from standard granulated, which is also cheaper.

I use an edit of Delia's:

1lb SR flour
3oz butter
8 FL Oz milk
3 tbsp sugar
Extra TSP baking powder.

Then make either as per hers or by putting everything bar the milk into the Magimix, pulsing til it's all mixed together, then slowwwwly adding the milk through the hole while blending.

Roll them out fatter than you think - about an inch maybe? Bake at 200c in a fan oven for 12 mins.

That makes about 20 dainty scones or 12-13 that are fatter.

@BarbaraofSeville that's a really good idea, thanks so much for the tip. The recipe only needs 2 tbsp and I have a Braun hand blender so will give that a go tomorrow.

How much will your electricity/gas bill cost to make clotted cream?

I have to admit I like butter (unsalted, French) on my scones before applying jam and clotted cream. Double the fatty goodness, what's not to like?
But having spread butter on the scone, the jam really has to go on next and then the dollop of cream on top.( I wouldn't want butter and cream actually next to each other, I'm not an animal.)
But cream on top is good anyway - my heart belongs to Cornwall.

I make mine with buttermilk or 50/50% mix of natural yoghurt and milk if you can't get hold of buttermilk. This gives it a light texture & makes my scones really soft inside.

Just had my receipt from my delivery this morning emailed to me. Clotted cream is ON! They had to change my mini scones to normal plain ones but, meh.
