I've seen this appalling ad a few times

Two young children dangling upside down by their knees, eating cheese in the hope that if they eat it upside down it will feed their brains

It took me a while to catch what it was actually advertising, but now I know, I am making a formal complaint

I cant believe how utterly stupid and irresponsible this is an as example to junior school aged children

White bread does turn to sugar, it gets broken down by Amylase in the saliva. I remember this from when I too was a biologist!
Doesn't make it poison though...

Not quite. The simplest view of the action of amylase is that it breaks down starch into maltose (disaccharide formed of two glucose molecules). It's not that simple in real life because starch incorporates a variety of different structures and the action of amylase on these leads to production of maltotrioses and limit dextrins (other polymers of glucose) as well as maltose.

It's di/oligosaccharidases secreted by the intestinal epithelial cells ("brush border") that break down these smaller molecules into glucose.

Anyway, the fact remains that it makes no difference whether your bread is brown or white: digestive enzymes still produce sugars from the starch. The benefit of brown bread comes from the presence of fibre and B vitamins.

Ah, but white bread has added vitamins....

Yes, white flour has to have vitamin B1 (thiamin) and B3 (niacin) added, as well as calcium and iron. There has been a campaign going on for decades to have vitamin B9 (folic acid) added, too, but it still doesn't seem to have got beyond the public consultation stage. Nothing about zinc or selenium, either.

It's been enlightening doing an AS on OP this morning. She's late 50s but looks so young she is fed up of being mistaken for 20 years olds. She's obviously some kind of prodigy as she states she was a research scientist for 15 years and a teacher for 30 years. Several careers spanning 45 years, both here and in Asia. Add in her emergency foster caring, work in A&E and homeless shelters, plus multiple marathons and ultra runs, volunteering, writing KS3 bullying schemes, supporting XR, always happening to experience whatever an OP is posting about just 'last week', it's a wonder she has any time at all to spout so much shit all over Mumsnet. Remarkable in fact, almost unbelievably so.
