To ask what you eat for lunch

I need some inspiration as I eat the same boring sandwiches every day and always fill up on crisps, biscuits and chocolate alongside it which is making me pile on the pounds. Any ideas welcomed Smile

Since WFH I’ve been skipping breakfast and just having brunch instead of lunch. So today was a bacon egg muffin. Usually I have eggs in some way (omelettes, bagels, etc). Yesterday I just used up some leftover chicken from Sunday and made a soup.

I never avoid carbs so today it was a cheese and chilli jam toastie, with salad and a few pop chips.

Yesterday we had a bigger salad with croutons, cheese and some crispy chicken from the freezer.

Tomorrow I think we’ll be having a tuna jacket.

Sometimes soup, sometimes leftovers.

I don't have breakfast or lunch. I just have dinner in the evening. I don't see how people can eat 3 meals or times a day

Soup

Things on toast, sardines are a favourite, also fish or meat pâté.

In the summer, salads.

Cous-cous with tuna or poached salmon flakes.

Chicken sliced with potato salad or coleslaw and a green salad.

I am having a total arse of a day, so today I have had (so far) 2 pieces of toast, a kitkat and a handful of Wispa bites. It was going to be goats cheese salad with walnuts.

Usually leftovers, just had a bowl of chilli with some grated cheese.

I've been having the same lunch on most days since I started wfh.. So just over a year now!
I chop up and roast some veg (usually carrots, peppers, courgettes and red onions, with some garlic and spices). To this I add some canned chickpeas (or any other beans or pulses) and some grated cheese.
The prep takes about 5 mins.

I'm calorie counting #weddingcountdown so I am for my lunches to be between 3-400kcal.

I am also working from home so I usually cool something whereas before I used to just heat up leftovers.

This week I had some Thai noodle soup with mushrooms and spinach topped with an egg. I had some potato waffles and eggs and today I'm having filled gnocchi with lightest phili and rocket and mushrooms.

I love carbs.

Tomorrow I'm having a fajita chicken omlette and Friday not sure yet. Maybe some more fajita chicken and rice.

Usually I’ll have an omelette or frittata or something in a pitta. I’ve had roast veg with sweet chilli sauce in a wholemeal pitta today. I’m trying to lose weight and have been focusing on having something tasty and mixing things up a bit more at lunch.
Other things are home made pot noodle or various dips, veg and pitta.

Leftovers, a sandwich or soup. Today I’ve made a chorizo and lentil soup and I’m eating that as I type.

I roasted a tray of veg yesterday morning (sweet potato, peppers, courgette and a bit of aubergine). I’ve had that today and tomorrow with halloumi, which you can fry in the time it takes to heat the veg in the microwave. I’m not pretending fried cheese is a health food but it tastes so good! Will grill a chicken breast tonight to take with leftover roast veg to work tomorrow.

Today we have Itsu on deliveroo but usually left overs/ a wrap/ salad / soup. Usually get a take away lunch on a wednesday as a mid week treat.

I don't even have dinner tbh. Usually just stick my head in the fridge 3 times a day and take a deep breath 🤷‍♀️ occasionally I'll inhale a crumb and that tends to keep me going.

Soup, sandwiches, salad with ham or egg or chicken in summer, pizza or leftovers from last night’s dinner. Occasionally pork pie with pickles and chutneys.

Cheesy crumpets today, with tomato and Worcester sauce. One of my favourites!

Other days we have things like:
Mushrooms and/or scrambled egg on toast.
Soup and a sandwich.
Toasted sandwiches (e.g. tuna melt, chicken with pesto and spinach, ham & cheese)
Beans on toast with grated cheese

We have a bakery round the corner so sometimes we pop out for their rosemary and sea salt sourdough and have it with soup.

Today I had a big plate of cheesy pasta and some fruit.

Yesterday it was omelette, salad and some garlic bread.

But then, lunch is my main meal of the day so that might be too much for others. I couldn’t work properly 1-8pm on a sandwich!

Just had a tuna mayo salad (the salad was a bag of mixed "super greens" from lidl) with half an avocado and some pumpkin seeds..

I'm on a low carb diet though so I have something like this most days.

I'm on the blood sugar diet at the moment, so I'm having the medi platter:

Couple of tablespoons of hummus, matchbox sized crumbled feta, handful of olives, cherry tomatoes, a pepper and cucumber.

Bloody delicious.

I think if you want to avoid the same boring sandwiches or snacking, you need to include lunch in your meal planning and prepare some things in advance, at least for some of the week. Things like home made soup (batch cooked and frozen) frittata (made the evening before, keeps in fridge a couple of days) various salads using extra couscous or pasta from the evening before.

You could make up a bowl of chopped salad to last a couple of days and then at lunchtime just take a portion and add eg falafel and hummus/tuna/meat/cheese plus dressing.

Other quick lunches we’ve been having are things like tuna melts, omelettes, veggie burger, beans/scrambled eggs on toast.

Soup, either home made or from Sainsburys, Greek yoghurt with a kiwi fruit chopped into it and an orange. I'm back at work in the office
