I'm a T2 diet controlled diabetic, so I no longer eat potatoes, but I might have one fir my birthday treat.

Make the most of your non diabetic diets!!!

Mine, DD's and anyone else's thats going spare.
DFIL doesn't eat baked potato skins, baked beans, mayo or gravy. Heretic indeed.

We used to have an Aga. I'd put them in m, before the school run, take the youngest to tumble tots and home fir an amazing baked potato!

Impale the potato on a metal skewer and it will cook quicker. Definitely my favourite food 😋

Microwave for 25mins. Cover with oil and salt. Bake for 30-40 mins. Skin is beaut!
Also, butter beans and cheese on top and lettuce and cucumber on the side is the best combination.

Yes.
DD doesn't like hers so I fill them with butter, tomatoes, grated cheese and salt and pepper and microwave for 20 seconds. Melty.

I had a jacket spud this evening, first time in ages. Oil and salt before baking to make the skin crisp. I baked half a dozen as I'd put the oven on and there's only me, I'll can use the inside of the extras for mash and make loaded potato skins with the rest. The mash and skins freeze well.

@NeonSparkle Unless I've got the oven on for a long time for something else, I microwave the potatoes for a couple of minutes, and then finish them in the oven - still get a crispyish skin in about half an hour.

Ooh i love the skin. And have only found the delight of oil and salt rubbed in first. Chilli flakes as suggested by a pp sounds even better.

(I'm another one that never peels potatoes, mash is delicious with skins in)

Always. And when making them to freeze, I always overstuff them so some skins are left over for double-baking as is.

It is the best bit, dh is generally picky so he leaves his. There used to be a place near my work who made awesome baked spuds, they put them in the oven at about 9am...now they are shut I struggled to find anywhere else as good, most are not crispy enough on the outside of fluffy enough on the inside...I might pop one in the oven for wfh lunch tomorrow!
