Then I eat the kids’ leftover potato skins.

I’m never going to encourage them to eat them.

I'm working late tonight DH has already put the potatoes in the oven, by the time I get home around nine they'll be crispy on the outside and fluffy in the middle, the skin is the best bit; olive oil, salt and pepper, sometimes chilli flakes, delicious. Even DS (2) eats the skin (oil only on his).
DH was a heretic but it was a condition of our marriage that he eats potato skins. He says he has come to love them and blames his own foolishness for throwing them away for so long.

Oh definitely, and baked with olive oil rubbed in and sea salt. No microwave just crispy oven goodness!

Yes I do now but I didn’t until I met DH as my parents didn’t and I didn’t know it was a thing you could do 😂 DH told me to get on with it and eat it and DS has always eaten his too.

Oh there is a take out place near me that bake the potatoes in their skins, cuts them in to wedges and puts them in the air fryer. It's absolute bliss.

No no no, you have to microwave for around 6-10 mins and then put in the oven for 30ish mins. You then get properly soft potato inside, and a really decent skin!

Yes of course. Few minutes in microwave, then olive oil and salt rubbed in skin, 45 mins or so in oven..heaven.. love a spud

My kids ask me to get the mash out, as I used to tell them they were mash bombs because they 'didn't like potato'. I'm still dutifully scraping it out and snaffling the skins.

Hmmmmm I'll try a pure ovenated potato and compare.

Mine are perfection though, and that just can't be bettered

I had two skins tonight as my dd doesn’t eat hers. I put my potato in it so it had a double skin, it was very pleasing!
