Seriously stuck in a food rut at the moment and I’m so uninspired I’m rarely cooking a proper meal.

Seriously unhelpful, but we are having smørrebrød (open sandwiches on rye) because I can't be a... to cook, my inspiration has run dry Smile.

Enchiladas - filled with chicken, peppers, mushrooms and sweetcorn. Lots and lots of cheese on top. It's that sort of day.

@Yellowcar2 could you post the recipe please? I love carbonara but hate eggs so can't force myself to make it with raw egg! Would love an alternative!

Meant to be fajitas but my morning sickness has made a come back at 38 weeks and I need carbs so I’m thinking pie, chips and mushy peas.

DS had dinner at lunchtime - fish fingers, pasta and corn on the cob at his request. So he will either have a sandwich or eggy bread with some salad bits later.

Veal meatballs in homemade tomato sauce + crusty bread. Small portions as we had Fish & Chips at lunchtime, it was lovely.

Shredded duck pancakes with hoisin sauce, chopped onions and cucumber, all cooked by DH. He does an excellent job with the duck which comes partially prepared in a vacuum pack. He gives me all the best bits. Grin

Roast gammon, eggs and chips.

Gammon roasted in the oven for just over 2 hours, oven chips and fried eggs.

So many lovely sounding dinners.. I’m going to make a list of the ones I don’t know how to make or haven’t a recipe for and ask you all for yours! Planning meals every day is such a pita!

We are having a home made chicken katsu curry using a spice box from our simply cook subscription.
It has been a life saver during lock down for food inspiration and trying to cook new things I would have been afraid to try before.

We meal plan every Saturday morning, it's a bit of a ritual, getting out the cookbooks, everyone putting in their votes and cravings, and taking note of any special occasions to mark, that mean somebody has the say as to what's for dinner on a particular day.

There's a pot of bolognese type sauce simmering on the hob. Made with Quorn mince and flavoured with a dash each of balsamic vinegar and Henderson's Relish and the nub end of fake (vegetarian) Parmesan.
I'm so hungry but can't eat until my husband finishes work. Or can I? 🤔😋. He'll never know 😁😇
