Drowning in chick peas..any ideas?!

We must have around ten jars of chickpeas..I didn’t bulk buy 😂just what has accumulated over the weeks, without being used. Been spending far too much on the weekly/fortnightly shop since lockdown and want to go easy on this week’s amount. Any ideas for dinners involving chickpeas? Then I can just buy bits to add to them..I generally only do a chickpea curry with spinach, coconut milk etc..gorgeous but that’s all I really know?

1 tin chickpeas (rinsed and blitzed), 200g dark chocolate (melted), 4 eggs (beaten), 2tbsp sugar. Mix together and bake 160’ for about 45 minutes until fudgy and set.

You can actually make a kind of flour out of chickpeas by blitzing them.

I make hummus/houmous with them, which is good, but need them incorporated into a full meal really so this week’s shop is a cheap one!

Make a dressing and add spring/red onions etc to make a salad. Also you can make a warm chickpea salad

Roasted vegetable tray bake with herbs and spice, 10 minutes before the end add chickpeas and tinned tomatoes.

Homemade hummus! Or, what I did tonight - added them to shakshouka - red and yellow peppers, onions, tomatoes, chickpeas, cook til soft, make wells and crack eggs in - tasty and speedy.

I like them stir fried with peppers mushrooms chilli and cumin, served with rice or homemade flatbread.

Recently I've made chick pea and butternut squash curry. Also, chick pea, pomegranate and mint salad.

I am also known to throw half a tin into a vegetable stir or veggie curry.

Oh I love chickpeas! Roast them with veggies (peppers, aubergine, red onion types) serve with cous cous and feta or halloumi.

I cook them down in a creamy sauce with veg almost like a risotto but chickpeas instead of rice

Roasted with paprika or everything - nice with sweet potatoes and guacamole, or with rice and broccoli

Chickpea brownies are honestly surprisingly good. Plus surely count as a protein filled health snack.
