Drowning in chick peas..any ideas?!

We must have around ten jars of chickpeas..I didn’t bulk buy 😂just what has accumulated over the weeks, without being used. Been spending far too much on the weekly/fortnightly shop since lockdown and want to go easy on this week’s amount. Any ideas for dinners involving chickpeas? Then I can just buy bits to add to them..I generally only do a chickpea curry with spinach, coconut milk etc..gorgeous but that’s all I really know?

I made felafel the other day and was surprised by how easy it was! also made my own flatbread to go with it, which was incredibly easy (just flour, oil, water rolled out and cooked in a frying pan) and must be cheap. if you can get flour.

Tin of chick peas, tin of diced tomatoes, halloumi, chopped basil, pesto and chilli flakes. Bake in the oven for 15.

Tip them into your compost caddy, make a hole in the bottom of the tin then you can plant on your tomato seedlings , as you haven’t got ( or can’t even get hold of) a pot to grow them on in.

Just stick a tin of the chickpeas in all the dinners you make. This trick turns dinner for 4 into dinner for 5, and might make it healthier. It also means that someone gets nice leftovers for lunch the next day. I will be first to admit this strategy works better for some meals than others... I am not sure I will be putting chickpeas in the fish pie again!

Falafel (and you can freeze some), different types of hummus (jalapeño and roasted red pepper are my faves and you can use the jarred red pepper. If you have small children you can whip up the chickpea water for a sensory activity. Or make meringues but I'd rather an actual meringue! Moroccan style dishes always work well, I do a nice Moroccan soup with chickpeas. You can get a Moroccan spice blend from most supermarkets and add to chopped tomatoes/any other veggies you have with the chickpeas. Dry roasted works well as a snack, cover in cumin and smoked paprika before roasting.

Tin of tomatoes, tin of chick peas, garlic, smoked paprika, pinch of chilli, depends on taste, little salt to taste. Add a drizzle of honey. Simmer for a while, meantime roast baby new potatoes with olive oil and garlic, little salt.
When potatoes are nearly done add prawns to chickpea/ tomato mixture.
When prawns are done serve with roasted potatoes and green salad.

Bean stew. Fry an onion and some garlic with a hint of chilli, add canned tomatoes, add chickpeas and a can of mixed beans. Nice as vegan, but meat eaters can add chorizo at the end. I do this in my slow cooker.

Falafel is really easy and you can spice is to your liking.

Or drain the chickpeas, coat in olive oil and any kid of seasoning like BBQ or Cajun and bake them on a baking tray until they’re crispyish and a tiny bit hard and they make the yummiest healthy snack. Good alternative to crisps.

A lovely summer salad:
Chickpeas,
Feta cheese
Cherry tomatoes
Cucumber
Olive oil
Lemon juice
Mint

Sliced tomatoes, cube the feta, chop mint and thinly slice cucumber and mix everything together. Add a bit of pepper

Delicious

Chickpea salad - mix with copped tomatoes, peppers, spring onions, chicken / ham / tuna, salad dressing (olive oil, vinegar etc), lots of herbs and seasoning. Lush and pretty much what I have most lunch times. You can make at as healthy / indulgent as you like.

Curry - good food have a nice chickpea curry

Dry them, then roast in the oven. We like honey and cinnamon, but can add any herbs/spices to them before roasting. The more you dry them the crunchier they get

You could have a go at falafel?

You can blitz them without oil or water and add some garlic and indian spices like garam masala and coriander and chilli and lemon and shape them into burgers and shallow fry

hummus with red onion and garlic is lovely on toast. or morocan style with turmeric and cumin? (I look at the ingredients on supermarket packs and copy as closely as possible)

chick peas and cous cous... (add turmeric, cumin, garlic )

curry, carrots and onions, chopped tomatoes, spices, chickpeas, i also ad cauliflower/courgette, if I have them or sometimes peas serve with rice or with potatoes that have been boiled then fried to crispy.
