I'm using up some over ripe bananas and have a spice banana loaf in t'oven. I'll post a pic when it's out of the tin. As long as it doesn't look like the dog produced it.

Anyone else got delicious looking pics of food they've made? Not normally something I'm into but I think some of us are probably cooking/baking more than usual.

I cook from scratch a lot but haven't made a cake for a while.

Go on then, show me your grub Wink

Hob Nobs recipe:

Combine these in a bowl:
200g caster sugar
190g plain flour
150g porridge oats

Melt in a small saucepan:
225g butter
1tbsp golden syrup
2 tbsp water

When the butter has melted, add 1/2 tsp bicarbonate of soda.
Add the butter mixture to the dry ingredients and mix well.
Roll into balls 2.5cm diameter, flatten and place on a non-stick baking sheet (or use baking paper).
Cook at GM4 for 7-10 minutes. Allow to cool on the sheet then transfer to a cooling rack.
They spread out in the oven so I cook them in batches of six per sheet so they can spread out more.

DH hasn’t stopped baking.

Yesterday he made Frìtole which are Italian doughnuts with brandy infused raisins. Sprinkled with icing sugar.

Today he made sourdough.
Ds made the nicest softest most delicious chocolate brownies ever.

I want to make brownies next but have no flour. I saw this recipe on good housekeeping, but it has ground almonds in it. If I leave them out do I need to replace with anything else?

torthecatlady do you have any other nuts you could blitz in a processor? Or polenta / cornmeal would work.
You will need some sort of substitute for the almonds

I’ve never substituted for almonds so I’m not sure...I meant in place of flour, got confused. You could give it a go, though, and see what happens!

What about peanut butter? Cut back on the actual butter in the recipe (and sugar if sweetened peanut butter)

Urgh I am so tired. Just came back to say I reckon it should be fine to substitute for the same weight. That’s what I would do if I were making the recipe.

I need to go to bed, have had such a foggy head today.
