I'm using up some over ripe bananas and have a spice banana loaf in t'oven. I'll post a pic when it's out of the tin. As long as it doesn't look like the dog produced it.

Anyone else got delicious looking pics of food they've made? Not normally something I'm into but I think some of us are probably cooking/baking more than usual.

I cook from scratch a lot but haven't made a cake for a while.

Go on then, show me your grub Wink

Oh so many wonderful baked goodies! 😍

I make a mean banana loaf (my DH’s favourite). Such a good way of using bananas. And a very good spiced carrot and orange cake, too. I’ve only got six eggs left though so using sparingly (or not using at all, for now).

I’ve got a frugal foodies thread running (making the best of every bit of food and coming up with ideas for leftovers/random bits from the cupboard or freezer), if any of you who like to bake or cook would like to post your photos and hints and tips there too, to help others.

Oat and raisin cookies. It was the only thing I could make with the very limited ingredients I had. Some fantastic bakes on here.

Here's my wobbly quiche Lorraine and some amazing banana and chocolate chip muffins.

I've also made cheese straws and cheese and mushroom crustless quiches.

Oh and conqueso (???sp??) dip, beef stew with cobbles and beef and mushroom pie.

I'm trying to reduce waste... I'm find we are eating way more though! Quarantine 15 will be a real thing in this house!

We've been baking loads. Chocolate cupcakes, cookies, flapjacks, pie.
All gone now...Blush

I made banana loaf (with added cinnamon), but I like the edges best so decided to bake it in a tray rather than a loaf tin. It’s delish!

Flapjack made with some leftover muesli. Didnt even get a chance to properly cool before they scoffed the lot!

We ran out of bread this morning and since I have a sore throat, I won't be welcome in Tesco. Made bread which is so much nicer than the sliced stuff in the shops, DS will have eaten it all by tomorrow morning.

Dh makes bread, mainly sourdough. Ds2 made a lovely loaf the other week so I might get him to make another one

@ChesterBelloc I’m sorry, I can’t be specific as I don’t remember - I have a habit of looking up recipes each time based on the exact ingredients I’ve got available to me or want to use up, and then adapting them as I go as well, so then I can never remember which one I used or what exactly I did...

I’ll try and have a look and find the one i last used but you can use any carrot cake recipe, really. I use olive oil as I like the slightly savoury element it adds, plus lots of orange zest, I usually add in an extra carrot because I normally make a carrot cake when I’m trying to use them up. I always add plenty of cinnamon, ginger, nutmeg, cloves, and cardamom. I sometimes vary it with walnuts, and/or cranberries as I don’t like raisins in cakes. For the icing I either use orange juice, vanilla essence and mascarpone or orange juice and icing sugar. Or if it’s a loaf cake I don’t usually put icing on it at all.

You could look for carrot and courgette recipes as well, or carrot and apple.

We live a short walk from grassy hills and woodland, so our daily walk has involved a bit of foraging. We made wild garlic pesto, but ran out of nuts, so DD was set to work on cheese and wild garlic scones yesterday. We don't tend to bake many cakes so I was pleased to use the self-raising flour.
