To ask for a ‘What I’ve eaten today’ gluten free version?

I love the ‘What I’ve eaten today’ threads.
I’m wondering if those who are gluten free for whatever reasons could give me some inspiration?
I’m planning on going gluten free for January to see if it will help my awful IBS symptoms.
After suffering for years and trying lots of different experiments with my diet (including the low fodmap which didn’t help 🙁) I am coming to the conclusion that bread, crackers, pasta etc are not helping me.
I have tried going gluten free in the past but found many of the gf products tasted awful and were horrendously expensive so ending up living off rice cakes which wasn’t ideal!
So, if you are gluten free, what do you eat in a day?

Don't try to look for gf replacements, they mostly aren't nice. Just eat foods that naturally don't have gluten in.

Typical day might be:
Yoghurt, berries, nuts (or homemade gf granola)
Soup, chunk of cheese, apple//baked potato with tuna mayo//salad with cold potatoes and slice of ham
Chilli con carne with rice. Piece of fruit or yoghurt.

I've got awful IBS triggered majorly by gluten, I do like rice cakes, the salt and vinegar kind though... the others taste rank Grin
I've found GF pasta to be the same, It's bread that's majorly different but I'm used to it now. When my DS has pizza I tend to use a sweet potato wrap and put mozzarella and toppings on that, If I haven't got a GF base in
I hope your IBS calms down, I find Buscopan helps me when I'm having a really bad episode. Such a pain having IBS Sad

I strongly advise if you plan to go gf. Don't go gf until the potential of coeliacs has been ruled out.

My eldest is gf.

Today he's had
Breakfast - gf birthday cake. Egg on toast. Banana.
Lunch - gf oatcakes with humours. Cucumber. Chopped pepper. Turkey. Apple. Boiled egg.
Snack - birthday cake.
Dinner will be mackerel with rice and veg of some description

I have had porridge (specifically he version) with almond milk. I had poached egg on asda seeded bread for lunch. We are having a simply cook recipie for tea sechuan (sp??) beef and rice noodles- definately worth a look, you can specify gluten free recipies and there are some really nice ones. The churrasco chicken was Devine! Banana as a snack.

I agree with mostly avoiding food that should be gluten but is made gluten free.

Gluten free bagel for breakfast with hummus.
Just had a red lentil pasta with sauce for lunch.

I find the schar vitality bread really good, just discovered new York bagels gluten free edition and they're amazing. Red lentil pasta is my preferred pasta of choice! There's some totally rubbish gluten free stuff but there's a lot now that taste really good.

I haven’t eaten gluten for twenty years. The alternatives are now so good that I now eat too much bread-

Today is poor-
B schar toast with marmite
L toast and scrambled eggs
T Tuscan garlic chicken and rice

Bitofnamechanging I had a full colonoscopy and endoscopy with biopsies for coeliac disease a couple of months back, thankfully all clear but still think I may have some non coeliac gluten sensitivity 🙁

Doingitaloneandproud Buscopan is the only thing which really settles my gut but unfortunately gives me numb finger tips which is really odd!

Schar is good bread, M&S without wheat sour dough loaf is amazing.

Porridge with banana and walnuts; omelette and beans; dinner is fish with veg. Then some fruit.

GF and and dairy free

Homemade waffles for breakfast (normal recipe with gf flour and milk alternative)

Gf pitta bread for lunch - bbc food Paul Hollywood recipe.
Tea - not sure yet but easier than lunch and breakfast to be gf free.

My OH is gf so I tend to be at home too. Today I have had:
Gf porridge (made with whole milk as I’m breastfeeding) with berries
A big salad (trying to negate all the shite I ate over Xmas)
Some (lots) of chocolate.
Dinner will be a roasted beetroot and chickpea salad type thing with some cauliflower sausages I found in lidl. They say gf on the packet so thought we should give them a go.

Don’t fall into the trap of thinking gluten free is healthy! Today I had porridge with Nutella, a Dominos pizza and a Toblerone, and later I’m having chilli with nachos, cheese and sour cream.

I've just gone gluten free after a celiac diagnosis. Have bought a gluten free bread machine book and a bread machine. I've only made one loaf so far but it was better than any of the shop bought breads (and not so processed). I bought an entry level machine for £45. With the huge cost of the tiny loaves of bread it seems a good investment when the bread is so much nicer. I'm going to try a cinnamon raisin loaf next.

I second just eating food that doesn't contain gluten in anyway as some of the gluten free versions are so heavily processed.

Today I have eaten almond risotto for breakfast made in the instant pot (from river cottage gluten free book which is excellent) and poached eggs on homemade bread for lunch then black beans and gammon stew for dinner.

I’ve had a fry up. Sausage, fried potato, fried GF bread, tomatoes, mushrooms, fried eggs. And a pot of tea. Not exactly healthy but it was amazing! I loved every mouthful.

Boiled egg with Genius toast
3 bean and veg chilli with rice
Lemon fruit fool
Out for dinner - will probably have a burger and salad and chips without the burger bun (need to check as some burgers have gluten) if not a steak.

The schar bread is very strange, it's borrower sized and tastes very sweet. Their crackers are great though. Asda own brand gf bread is very good, and m&s bread is excellent if you happen to have one near by.

Echoing what everyone else is saying though - don't just swap the gluten versions for gluten free. They're full of even more crap than their glutenous cousins.

I'm doing a month of keto so my food today will seem a bit strange:
B - bacon and eggs
L - ham, cheese, salad
D - sausages, roasted broccoli, garlic mushrooms

@Redstorm2807 I haven't used my bread machine since I became GF so am very interested that you have a recipe book for bread machines and GF bread!

Can I ask what the name of the book is?

I'm GF exactly but low carb so obviously tend to eat foods that don't have gluten in. Today I've had:

90 second keto bread (gf baking powder, almond flour, egg, salt and butter) with mustard and butter with a pork patty (Aldi, so tasty), halloumi and bacon.
A babybel

Not sure what dinner will be yet as I'm feeling very lazy and can't be bothered to make anything. Make spag bol as I have some soy bean spaghetti (Aldi) in the cupboard that I can have. If not sausages and broccoli and leek cheese (cheese sauce made with cream and cheese).

I will eat more veg once I'm back at work Monday Grin making the most of the last two days off

Banana pancakes, uncle bens microwave packet rice and will have shepherds pie for tea! Agree with pp that opting for naturally gluten free foods is nicer and cheaper than using gf substitutes but having said that these are getting better! I still struggle with bread replacements but like chick pea pasta and i have more success with doves farm flour as a direct substitute in recipes than supermarket own brands so it's worth that little bit extra! Good luck!

Some great ideas, I’m writing these all down.
I don’t want to eat too many gf products tbh and would much prefer naturally occurring gf stuff but having had gut issues for so many years has left me quite wary of trying new things so I would like some fail safe bits in like gf pasta and bread, on standby as I know when I’ve tried going gf before its things like toast and sandwiches I really miss and end up falling off the wagon and scoffing the kids bagels and bread!

My daughter is coeliac and Schar is the bread she favours , although Tesco also do a gf own brand bagel which is fine as well . The B free range is also quite good particularly the pizza bases and bake at home baguettes. So far today she’s had a gf cheese and chipolata toastie .

Wrecktangled where do you get your almond flour from? I’ve looked in the supermarkets but they only have almond meal which obviously isn’t fine enough.

I've always used ground almonds no problem but recently want to Costco and got a massive bag of almond flour for £12.99. I was so excited Grin
