To ask for a ‘What I’ve eaten today’ gluten free version?

I love the ‘What I’ve eaten today’ threads.
I’m wondering if those who are gluten free for whatever reasons could give me some inspiration?
I’m planning on going gluten free for January to see if it will help my awful IBS symptoms.
After suffering for years and trying lots of different experiments with my diet (including the low fodmap which didn’t help 🙁) I am coming to the conclusion that bread, crackers, pasta etc are not helping me.
I have tried going gluten free in the past but found many of the gf products tasted awful and were horrendously expensive so ending up living off rice cakes which wasn’t ideal!
So, if you are gluten free, what do you eat in a day?

Breakfast- yoghurt and fruit. Usually have cereals and milk.

Lunch - Spanish tortilla, cheese, hummus, veg.

I am coeliac and so is my DS. Today I had GF panettone, for lunch Spanish dried meat, manchego and pickles and curry from the supermarket for supper. I do eat GF pasta, and crackers but not bread. We eat lots of rice and risotto. I felt better when I was also dairy free but find it too restricting.

Every Gf bread I've tried tastes awful, really sweet aswell! For Gf pasta I go to chickpea or pea, its actually really nice! I dont often eat pasta though, or any processed carbs really so gf is actually ok.

I'm going to have to get tested for coeliacs so I have to start including them back in my diet for 4 weeks, which I'm dreading- so agree with the getting tested first, I wish I had, but been gf for a long while now.

Today I've cooked a massive spag bol for everyone (onions, celery, carrots, red & yellow peppers- DC special fave atm).
Had mackerel and eggs for lunch, some rice cakes with Dd's-
Always have cottage cheese, celery sticks, carrots, hummus at the ready in the fridge.
Any meat
Any fish
Different cheeses
I try not to eat alot of sugars as this seems to mess with my system aswell, but daily prebiotics help.

@RhodaCamel we made the mistake of removing gluten from ds1 and are going to have to battle a diagnosis with a 6 week gluten challenge. Glad to hear you have the all clear. Sorry if I was patronising Smile

If you have a nutribullet or equivalent with the grinder head you can further grind ground almonds to make finer flour. Or just start with whole almonds.

The book is 'gluten free bread and cakes from your bread maker's by Carolyn Humphries. There were two on Amazon but the other one looked very American in terms of ingredients. A lot of the breads call for egg white but I just use dried egg white or the little cartons of egg white you can get in the supermarket.

I'm coeliac. I really like theGenius triple seeded bread, altho it often has holes in. The tesco gf fusilli is fine - my non-coeliac husband is happy to eat that occasionally. My fave products are the new Tesco gf croissants and cinnamon swirls- lovely for a treat.
Today I've had:-
Poached eggs on gf toast
Home made chestnut & bacon soup
Bit of leftover Xmas cake (Waitrose & delicious)
Dinner will prob be jambalaya or some sort of risotto.

I was diagnosed celiac just over a year ago, I echo pop’s who say to look for naturally gf
Today I have had gf granola with sliced banana and a slice of asda gf toast with peanut butter
Lunch was poached egg on toast dinner tonight is curry, I am having a chicken and cauliflower korma with rice. I keep meaning to look at how to make gf naan but haven’t yet so none tonight 😞

I'm gluten-free but also lactose-free and some fructoses set me off, so I'm mostly low-FODMAP but I've learned what I can allow myself.

Today's food so far:

A poached egg on top of wilted spinach and sweet potato mash (leftovers from last night, I'm not usually interested in mashing in the morning)

Some almonds, dried cranberries and dark chocolate as a snack

Lunch was an all-in-one-pan-in-the-oven roasted chicken breast and veg (red, green and yellow peppers, courgette, butternut squash, etc etc)

Dinner tonight will be a stuffed and baked aubergine with gluten-free breadcrumbs and feta.

M&S chickpea pasta is really nice. I make basil, walnut and olive oil pesto, add artichokes and red peppers it's really nice and the pasta is quite high in protein.

3 GF here. Homemade sweet potato soup / carrot soup, dinner will be tempura battered chicken from Aldi with rice and sweet and sour sauce.

I get gluten free / onion free/ low FODMAP stock cubes from amazon (Massel 7s) for soup etc.

I’ve done wheat free and low FODMAP in the past for IBS but GF alternatives don’t agree with me at all. So much random crap in them. Sainsbury’s has two versions of corn pasta though which literally have two ingredients in Star

I'm gf and so is DD. Today we have both eaten the same. Gf toast for breakfast. Hummus, cucumber, pepper, cheese and lentil chips for lunch. Rice cakes for snack. Dinner will be beef casserole with roast potatoes and veg.

Dd is coeliac and vegetarian.

Gf bread isn’t great. She reckons the Genius stuff is the best. Gf pasta is fine. She likes the Schar waffles and part baked baguettes.

I make a lot of curries, stuff like chickpea and spinach stew, home made soups. I’m making a green Thai curry tonight. Am cheating and using a packet sauce which is what I call accidentally gluten free, so not a special gf product but no gluten ingredients. I’ll add chestnut mushrooms, bean sprouts and peppers, Pak Choi.

Bought some mushroom and leek sausages in Waitrose today which are also gf.

She eats omlettes, jacket potatoes. Just discovered gf porridge sachets which she likes.

Homemade squash soup for lunch. Salmon (marinaded in gf soy sauce, ginger, maple, garlic) with rice and beans. I also made a gf cake which usually works well with dives flour but this time was like a brick!

I find Schar bread the best although the Warburtons sourdough seeded boule is ok. Genius bread is grim in my experience. I agree with pp comments 're not relying on gf products. Ones i do have in the cupboard however include Freee fibre flakes and flour. Mrs Crimbles chocolate macaroons are a treat but I tend to bake my own so can keep calories in check.

The slow cooker is invaluable and I have found the Nom cook book really useful for dishes. I have just bought a gf recipe magazine and that has useful ideas to help vary meals.

For alternatives I prefer the Be Free seeded loaf for toast and the Warbutons unsliced one for sandwiches, bread type stuff. I love it dipped in oil and balsamic vinegar. There is a white one which is nice but there is a seeded/brown one which i prefer. I can't remember its name exactly. I get them both from Tesco.

I find the tesco own make seeded rolls when we are having
(Veggie) burgers in rolls like tonight hold together better than the Genius ones. In fact I'm not mad on many of their products.

I find the Tesco pasta is fine, in fact we've had it so long that everyone prefers it so its the only pasta I buy now.

The stuff you get now is so much better than it used to be, but I do like trying to eat without too many alternatives.

Things like having soup without bread is now just part of life, whereas before i would always have soup with a slice or two of bread.

I also love oatcakes so will have them instead of bread.

I've been gluten free for about 13 years due to IBS and it has made a massive difference

If you have IBS watch the soya I have ibs and gluten intolerant soya hurts my stomach and many gluten free bagels etc have them in the yellow brand bread already mentioned is good but sweet so watch sugar levels (also IBS trigger for me) basically eat as much fresh as humanly possible dont rely on substitute food

Pasta - barilla gluten free is the best but most of the supermarket ones are fine

Bread - M&S or the Schar Ciabatta

Pastry - I've got a failsafe recipe that I use but alternatively ASDA gluten free ready rolled is pretty good.

Morrisons for pizzas - their frozen sourdough ones are good and if they have a fresh pizza counter they can also do you one there.

M&S for spring rolls, chicken goujons and breaded fish.

Co-op for fishcakes

Today's menu-

Normal ASDA frosted flakes (they contain barley malt but at a level coeliac uk say is still gluten free)

Lunch was homemade beef stew and dumplings (Morrison's vegetable suet is gluten free)

Dinner is probably going to be a stir fry of some sort using rice noodles

Today I had a beetroot, ginger and kale smoothie for breakfast, lunch was ham and coleslaw, tonight will be thai takeaway. Agree with pp - don't waste your money on gluten free versions of bread etc, they are very expensive and not even nice. Most unprocessed food is naturally gluten free :)

I’m looking forward to trying different foods, I’ve been relying on gluten products too much over the Christmas period, it’s triggered off an bad IBS flare up.
pastabest I’d love to know your pastry recipe, it’s one thing I missed when going gf.

DD is gluten free. Gf pitta breads by bfree are fabulous. Pop them in toaster or under grill until hot and they make great naan substitutes or just slathered with cream cheese or boursin for a snack.

El paso gf tortillas are really nice too.

Ha!! I take it back about the Tesco rolls. Mine collapsed spectacularly with my burger tonight. I gave up on it and had the burger without a roll.

As for IBS even though I don't eat my usual triggers, i can get a real reaction to overeating in general. So too much food really bloats me up. So Christmas was bad even though i didnt eat any (known) foods.

Alcohol doesn't help either i dont think.
