To ask for a ‘What I’ve eaten today’ gluten free version?

I love the ‘What I’ve eaten today’ threads.
I’m wondering if those who are gluten free for whatever reasons could give me some inspiration?
I’m planning on going gluten free for January to see if it will help my awful IBS symptoms.
After suffering for years and trying lots of different experiments with my diet (including the low fodmap which didn’t help 🙁) I am coming to the conclusion that bread, crackers, pasta etc are not helping me.
I have tried going gluten free in the past but found many of the gf products tasted awful and were horrendously expensive so ending up living off rice cakes which wasn’t ideal!
So, if you are gluten free, what do you eat in a day?

Nakd bars are great for keeping in your handbag / desk for snacks when everyone else has cake etc.

Gluten free pastry

12oz plain flour (I use ASDAs GF)
1tsp xantham gum
3oz lard
3oz marg or spreadable butter NOT proper butter
1 egg
80mls cold water

Rub the fats into the flour, then add the egg and water and bind it all together then knead it like bread for a few mins.

I usually wrap it up and put it in the fridge for a bit after that but if you are in a hurry it doesn't matter too much.

It then just rolls out like proper pastry. It definitely needs an egg or milk wash but other than that it's great for pies/ quiches etc, it's a little short for sausage rolls to my taste but they are still edible.

The recipe is credited to 'Maria' whoever she is. Grin

I had GF fruit cereal bar before I took ds swim training at crack of dawn!

Slice of GF toast and an egg for lunch.

Bolognase with veg for dinner. (Ds had spaghetti with his but I'm not a fan of Gf spaghetti).

I eat a lot of rice and I'm actually WF so eat oats too. I do eat GF bread and wraps and Tesco wraps are nice and the ASDA sliced bread is too.
I also like ASDA GF cheese crackers and Sainsbury's GF macoroni.

Have a look at bertinet sourdough bread, it's traditionally made over several days which removes the gluten and can be eaten by people with coeliac too. Waitress are the only shop to sell it in our area though.

I’m a coeliac who eats pretty terribly but here’s what I’ve had today:

Genius brioche bun toasted with butter and strawberry jam (FYI the 28p one from Tesco is looovely.)
2 Birdseye potato waffles and 2 poached eggs
Some leftover orange matchmakers
Then for dinner I’ll have GF fish fingers, mash and corn on the cob

Great thread op!
I’ve only been gf for around 6 months and still sulking about it. So really like to see what others have!

Breakfast today- gf muesli
Lunch- gf cheese sandwich
Dinner- prawn Thai curry with rice noodles
Snacks- too many chocolates!

I'm not diagnosed coeliac (my sister is) but I have given up grains to ease my digestion. It's helped markedly and I don't bother with gf stuff unless I'm really, really missing something. Generally breakfast is fruit, yoghurt and seeds or apple and peanut butter or sliced cheese; lunch is something and salad or soup and cheese; dinner is protein (fish, chicken, red meat) and veg or spiralised noodles if there's a pasta sauce I can't miss. Mexican I serve on a bed of salad. I do have a recipe for crackers made of seeds only that works well for both cheese and marmalade!

Once I'd got over the fact that I love bread and pasta but it doesn't love me, it's been ok. Birthday cake is most difficult, but I buy / make gf and only have a very small amount. I'd suggest pastry is beyond saving (tried a chickpea one over Christmas. Yuk).

Have you got evidence for that? I've googled and can't find anything, the bread itself isn't marketed as gluten free and there's nothing ever been mentioned on the coeliac Facebook pages which are usually all over anything like this?

Coeliac UK are pretty clear usually that 'sourdough removing the gluten' is a myth. Although you can get gluten free sourdough made with gluten free flours and starter.

I will be extremely happy to be proved wrong as it looks tasty.

Looks like I’m off to stock up tomorrow, I think that’s the key, as no one else is low fodmap or gf in the house if I run out of stuff I end up eating dh and dc’s gluten bits.
IWillWearTheGreenWillow I too, would really like to try giving up all grains to see if its helps my digestion.

This thread is really useful. I'm finally going gluten free after my GP recommending it for some time....I have Hashimotos underactive thyroid and it's been causing all sorts of problems with my skin, hair, weight and mental health for a few months. Here's hoping it makes a difference! Just done the online shop to come tomorrow so have stocked up

Coeliac here.

I just eat normal things but gf version. It’s actually really easy. Not easy to eat out though, although you will be okay with cross contamination so that should be a bit easier for you :)

DD is gluten and dairy intolerant. Today she has had:

Tomatoes, baked beans, bacon, mushrooms; fruit salad; GF blueberry muffin (hotel breakfast buffet)
Meatballs in arrabiata sauce with courgette noodles (made to order at Vapiano)
Waitrose Free from GF and Dairy free fruit, nut & seed granola square
Lamb tagine and rice (homemade, based loosely on Nigella's recipe in Feast, but I add carrots, courgette, mushrooms for veg- v popular in our house!)

You need to look at the wheat free bakery and Voakes. They both do lovely GF options which you can buy online.

We are a GF household due to a few of us being coeliac. Doesn't bother me at all that we are GF, I definitely don't feel we miss out that's for sure.

Meals are pretty much the same as everyone else I just sub if I need to. B Free is a good in store brand, Sclar make nice French stick style loaves. Warbutons is probably the best dipping store bought GF bread for dunking in cheese.

Sainsburys did a wonderful freshly baked loaf which was the best bread ever but they stopped selling it. Really annoying!

@pastabest I read on MN about the sourdough thing, bought it for DD... and she was very ill Blush poor baby. There is Warburton's GF sour dough that she occasionally has now, which tastes reasonable (depends how recently you are 'real' bread, I think, dd has had 2 years with none, so probably can't remember too well). It keeps well too, definitely five days.

I dislike the schar products just taste too sweet I prefer Warburtons artisan breads or genius triple seeded for sliced.
Today I had
Gluten free porridge oats with nuts, dried fruit and seeds.
Gluten free tiger loaf sandwich with home cooked ham and a free tortilla chips from M£S.
Baked potato, pork chop , homemade gravy and veg.

genius toasted cheese with spring onions & toms clementine lunch gf cornflakes (lactose free milk) tea is mushroom capsicum &onion fried with egg & new pots (& snack of almond butter) tinned fruit in juice & milk afters

And I agree with those saying make food that is naturally GF don't buy the special stuff- it's v expensive, and most tastes gross!
We eat mostly home cooked food:
Spag bol
Chili
Tagine
Beef or chicken casserole
Shepherd's pie
Roast dinner
Salmon and rice
Sausage and mash (Sainsbury's taste the difference"the meaty one" has no rusk, it's 97% meat, so GF)

I'm sure as an adult there are many more meals available... but in addition to DD who is GF/DF/ low FODMAP... I have DS who has AS, and eats a very limited range of foods.

Brunch: Spicy Poached Eggs & Chickpeas
Dinner: Roast chicken, cheesy garlic leeis & cavolo Nero, brown rice.
Strawberry yogurt.

DD likes stuffed peppers too.
There's a Jamie Oliver recipe for flatbread that uses yoghurt (on internet) I use goats yoghurt and GF doves farm flour, and that works well.

Usually have gf granola, had bacon and avocado sandwich (I like Warburton tiger loaf best) for lunch. Fish, hash browns and veg this evening.

I find shop gf cakes rather disappointing but have started to bake my own and the whole family loves it. I find generally things which should be dry (crackers etc) are ok, things which should be moist are good - brownies, fruit cake etc. Things in between- bread, Victoria sponge etc tend not to be so good. The key with gf baking is to follow a gf recipe. Only trouble is now I digest everything better I absorb more calories so put loads of weight on initially.

@RhodaCamel, I was a bit wary of taking grains out to start with as I felt a bit of a fraud, but it's been amazing. I suffered from appalling flatulence, trapped wind and bloating and I often felt just... off. I'm at a point now where I can tolerate a little bit of bisto to thicken gravy, but not GF pizza. This probably suggests it's not actually gluten that's the problem, but hey ho. The surprise thing I can't eat is marmite.
