To ask for a ‘What I’ve eaten today’ gluten free version?

I love the ‘What I’ve eaten today’ threads.
I’m wondering if those who are gluten free for whatever reasons could give me some inspiration?
I’m planning on going gluten free for January to see if it will help my awful IBS symptoms.
After suffering for years and trying lots of different experiments with my diet (including the low fodmap which didn’t help 🙁) I am coming to the conclusion that bread, crackers, pasta etc are not helping me.
I have tried going gluten free in the past but found many of the gf products tasted awful and were horrendously expensive so ending up living off rice cakes which wasn’t ideal!
So, if you are gluten free, what do you eat in a day?

Sounds like a problem with yeast, which is in bread and marmite but not in gravy

Today had:

Buckwheat pancakes with berries and yoghurt

Mackerel, brown rice, and salad

Lentils with potato, avocado, tomato, spinach

Crudités, crisps and hummus as a snack

Wine

About to eat some gluten free homemade cake

@pastabest how did you find out about the barley levels please? Is there a list on coeliac UK or is barley malt in cereal alright?

@lastburritos I have Hashimoto's too and going GF has helped enormously, in fact so much so that apart from having to take the daily thyroxine it no longer impacts my life at all. It's a bit hard at first as a lot of 'go to' foods contain gluten but after a few weeks eating GF just becomes your new normal and you won't look back :)

Yoghurt and berries for breakfast.

Cheese and ham flatbread (flatbread made with gf flour & yoghurt) and an apple for lunch

Roast lamb with potatoes and veg for dinner.

Plus a couple of florentines with coffee

Eating at home isn't a problem, but I still find eating out on holidays a pain. I lost 3kg on our most recent holiday, not because we couldn't find things to eat, but because a lot of the time the gf options are also low calorie.

There's a list if you are a member of Coeliac UK (you can get an app from them which scans barcodes and tells you if the barley levels are safe or not).

A lot of supermarket own brand cereals are safe,
no Kellogg's cereals are safe.

Barley malt vinegar is safe and anything containing barley malt vinegar such as chutneys etc where the only gluten allergen listed is the barley in the vinegar is quite often safe too (obviously not if you have a separate barley allergy/ intolerance though).

Eat foods that are naturally gluten free , it takes a while to find a bread that tastes good , read every label .

Kellogg's cereals are not safe for coeliacs
Many supermarket own brands are - a search for a specific one on the Coeliac UK Facebook page will usually give you the answer

I'm coeliac and also vegan. Today I have eaten:

B= potato waffle and vegan sausage sandwich
L= apple
D = tempeh with homemade bbq sauce, baked potato, homemade coleslaw and salad

So I've not eaten particularly well ConfusedIn a normal week we'd have things like daal and rice, Mexican veggie bowls, risotto with asparagus, pasta with greens, homemade veggie soup. I prefer to eat nationally gluten free foods but do have GF pasta and Schafer bread (which I find to be the best by a country mile). I also have GF overnight oats for breakfast most mornings but I know a lot of coeliacs can't tolerate oats, GF or not.

Coeliac here too, not keen on GF bread or pasta, so I try to avoid them.
Breakfast I had GF porridge and a coffee
Lunch I had some of the new curvies fake pringles crisps along with GF plain crackers (asda taste the best to me) with strong cheese and beetroot.
It doesn't help I got a hamper of GF foods for christmas so have been eating all sorts of sweet stuff I don't normally get so I'm picking all afternoon.
Teatime I had mashed potatoes, heinz beans and GF fishfingers.
Not the healthiest day ever but I'm satisfied and full (of junk)

@AmazingGreats, I think you're right about yeast; although I had wheat free and gf biscuits a couple of days ago (oat based) and they made a mess of things within 4 hours, so...

I'm just going to have to live on lettuce and ice cubes, aren't I? Grin

I think yeast may be an issue with me too. Yesterday I had a terrible IBS flare up, the only thing I had eaten any different from normal was some marmite peanut butter!
Oh and tomatoes which I don’t normally eat.
IWillWearTheGreenWillow I feel the same, sometimes seems like all I can handle is air and water!

White rabbit pizza for dinner. That’s the brand name, it’s actually vegan as well as gf. Has a rice base.

Breakfast smoked salmon and scrambled eggs.

Lunch gf fish and chips

A vegan magnum for snack

Beef chow mein noodles for dinner.

I’m neither coeliac nor vegan but try’s no to use up random Christmas bits.

Also made frittata for breakfast tomorrow, salad for lunch, teriyaki chicken for dinner.

Cold chicken for lunch
Beef stew with butternut squash, carrots, leeks, onions, mushroom and sweet potato for dinner
A gin or 2!

I do low carb and almond flour is v good for making cakes, muffins and pancakes. Also check out 'chaffles', waffles made without flour.

Warburton's g/f tiger bread makes absolutely brilliant toast (M&S g/f sourdough is the next best thing). M&S g/f sandwiches tend to be the best ones; so many of the others are really quite disgusting. M&S actually have tried to make a lot of their products with g/f parts e.g sausages.

El Paso have Mexican kits with g/f tacos and the g/f tortillas are also almost like the real thing.

Try and change your eating habits rather than accommodate a lot of the g/f stuff as a lot is pretty naff and full of additives. Reading the labels is now part of your life unfortunately.

I'm gf and df, today I've had:
Breakfast - warburtons tiger bread toasted and a cup of tea
Lunch - carrot soup
Dinner - homemade gf and df toad in the hole with roast potatoes and veggies
Snack - hula hoops

This option won’t be for everyone, but after exhausting NHS help for my stomach issues, I was recommended a private nutritionist who uses muscle testing to discover what food your body can and can’t tolerate.
I was sceptical at first and have had to cut out a LOT of food (not just gluten, but a certain meat, some vegetables/fruits/nuts, all processed sugar, cooking oils, some gf alternatives, etc.), but it has been the only thing to make a difference to my quite severe symptoms!
Anyway, in terms of food recommendations, my personal favourite options are omelettes, overnight gf oats, breakfast hashes, Spanish tortillas, salads, and rice pasta with a variety of sauces/vegetables!
If you have a sweet tooth, stewed apple (just apple and water, cinnamon optional) is great, and this is the best dessert I’ve found detoxinista.com/flourless-peanut-butter-chocolate-chip-blondies/
I also keep a few Amy’s Kitchen meals in the freezer for when I’m not up to cooking, as they are not just gluten free but have only natural ingredients.

I have been gf for just under a year. I am not that keen on gf bread so tend to avoid it. An average food day for me is:

Breakfast: Asda free from cornflakes

Morning snacks: Yeo Valley strawberry yoghurt, coop free from millionaire bites and Walkers baked ready salted crisps

Lunch: jacket potato with butter, sometimes with chicken or tinned salmon, bar of chocolate

Dinner: potato of some description, with veg and white meat or fish

Snack: strawberries, pineapple and grapes

@Winglessvulture Walkers aren't recommended by Coeliacs UK as they may be cross contaminated in manufacturing.
Teco and Asda own brand basic crisps are safe though.
The baked crisps were my favorites I was so sad.
