To ask for a ‘What I’ve eaten today’ gluten free version?

I love the ‘What I’ve eaten today’ threads.
I’m wondering if those who are gluten free for whatever reasons could give me some inspiration?
I’m planning on going gluten free for January to see if it will help my awful IBS symptoms.
After suffering for years and trying lots of different experiments with my diet (including the low fodmap which didn’t help 🙁) I am coming to the conclusion that bread, crackers, pasta etc are not helping me.
I have tried going gluten free in the past but found many of the gf products tasted awful and were horrendously expensive so ending up living off rice cakes which wasn’t ideal!
So, if you are gluten free, what do you eat in a day?

Yesterday breakfast bacon avocado genius seeded bread toasted sandwich lunch turkey salad crisps dinner cheese and nairns gf cracker selection salad celery carrot sticks and gf sausage

Today

Yoghurt
Bfree pitta cheese salad and coleslaw
Roast pork roast pots and parsnips carrots peas sweetcorn and gravy
Ice cream

Thanks @Troels that is useful to know. I'm not coeliac (been tested by gp prior to going gluten free) but try to avoid as much as possible as I believe I may have an intolerance and understand that gluten isn't great when you have endometriosis. I might try some supermarket own brand crisps instead though, but I love the non-greasy taste of the baked ones!

Fruit and yoghurt for breakfast
Salad and a nut bar for lunch
Amy’s kitchen macoroni cheese for dinner because I feel lazy!
Snacks were naked bars, cherry tomatoes and fruit

Breakfast: aldi 'rice krispies' with milk and a cup of tea
Lunch (at desk): two apples and a clementine
Dinner: Chicken korma, basmati rice and poppadums with mango chutney, home made gf chocolate muffin, raspberry yoghurt.

Todays dinner gf lasagna home made turkey mince courgette and chickpea in the sauce waitrose gf pasta sheets white sauce.

@TalbotAMan Aldi rice crispies contain barley malt extract which coeliacs can't have. You may not need to be that strict but flagging for those who might need to be.

Breakfast - sliced apple with peanut butter, coffee
Lunch - cheese on seed crackers with cucumber and celery. Coffee.
Snack - bar of Fry's raspberry cream Blush - well, you said gluten free, not healthy!
Dinner - courgetti with bacon, tomato and chili sauce. Lots of fizzy water.
Evening - cup of mint and liquorice tea

Today I have had tuna salad with some cheese, a packet of aldi's snackrite crisps, a packet of rice crackers and loads of coffee.
Tomorrow I plan to have scrambled eggs for lunch and a baked potato with beans in the evening.

I have IBS too, it’s helped but so has cutting out other random stuff - have a look at FODMAP.

I’m also doing Keto. For breakfast I had Greek yog, almond butter and blackberries.

Lunch I had a tomato, mushroom, spinach and cheese omelettes.

Dinner I had slow cooked lamb shanks cooked in herby stock, broccoli, spinach and kale.

I don't think the gf bread is nice, but the gf pitta's from asda are lovely.

Today we had:
Almond milk, banana, kale and blueberry smoothie

Mexican chicken and veg with rice

Soup and a rice cake

We've recently went GF and buying stuff that is specifically GF is very expensive so just trying to leave less carbs in general really. I do enjoy the pasta though and it takes less time to cook 🤣

@JoeyJoJoJunior I agree on both counts! However over Xmas I got some Gradz GF seeded sourdough from Ocado and it was lovely. The best I’ve ever had.

Do you use a sachet/spice mix that is gf Joey? I'm new to it all so just trying to find ideas. I'm not a huge fan if bread and have previously been low carb so I dont mind skipping most stuff but weekends I would like a treat

Giving up wheat had massively helped my IBS symptoms.

Oat granola with yoghurt and a banana for breakfast - I eat porridge with seeds loads.

Roast veg salad, lentil soup for lunch. I usually have oatcakes with soup.

Bolognese with a baked potato and cheese.

Good luck with reducing your IBS symptoms, I feel so much better.

@IWillWearTheGreenWillow Fry's chocolate bars are a may contain wheat so not suitable for coeliacs. I appreciate I may be coming across as a GF Nazi here but useful info for newly diagnosed folk who might be reading the thread.

I'm also not coeliac but very intolerant to gluten. Today I had Schar cornflakes, boiked egg and gf bread soldiers for breakfast then lunch out where me and dds and dh shared gf pizza and fish and chips.
For tea I made a.beef and mushroom.stew with mashed potatoes and brocolli. About to have some amazing fortnums and masons gf Christmas cookies for supper!

Oh blast, really? That may be why I feel peculiar. I'd put it down to raw courgette which can also be problematic for me (god knows why, surely it's almost completely inert?).

B - GF porridge oats with soya milk
L - GF black pepper crackers and ham
Snack - fruit
T - roast chicken, veg and mash followed by a slice of gf cake

I like toasted Warburtons bread or the pitta pockets. Some of the other brands I can't even swallow.

Breakfast - nature's path berry granola and Greek yoghurt

Lunch - the new gluten free Ginsters Cornish pasty (it was good)

Dinner - homemade lasagne. Ragu I made from scratch, Sainsbury's gluten free lasagne sheets and a jar of white dolmio lasagne sauce on top (because who can be arsed making gluten free cheese sauce from scratch Grin).

I've not looked at all of them but weirdly most white lasagne sauces in jars from most supermarkets/ brands are made with maize and often don't have any gluten containing ingredients listed.

@IWillWearTheGreenWillow I know, it's rubbish. I used to love them pre-diagnosis. Shame about the courgette though I'm slowing learning there's no rhyme nor reason to what my body reacts to. Seeing my gastro consultant on Thursday as I've been experiencing gluten symptoms for the last few months despite a strictly GF diet Sad

I bet chocolate and crisps catch people out a lot. People don't think to check things like smarties and chocolate bars.

I have coeliac disease. GF bread is edible if freshly baked (including those par-baked breads that you finish off in the oven) or if its frozen sliced bread that you toast. Otherwise don't bother. Tesco GF garlic baguettes are alright.

Today I had GF white toast (Semper brand which I don't think you can get in the UK sadly) and butter, with a chunk of cheese and a clementine for breakfast/lunch

Far too much chocolate, sweets and crisps for snacks

Tea was GF sausages baked with carrots, cauliflower and cherry tomatoes

I've been gf for 14 years and am now low fodmap too (under a dietician) for the last year, so can eat basically nothing now 😂 but today I've had:
Breakfast - banana
Lunch - gf bagel (genius I think) with scrambled egg and bacon
Snack - Holland and Barrett tiffin bar (Xmas leftovers)
Almond milk hot chocolate (but I think this may have had milk in the powder as it set me off)
Dinner - homemade chicken korma with rice

I find Warburton gf white sliced is the best at the moment, but I'll be trying some tiger bread after reading all the comments I think! I also have gf cornflakes and use schar for their ciabattas and paninis. Great chain restaurants for gf menus are: Bill's (my current favourite), prezzo, zizzis, cote.

Giving up soya made a big difference when I went low fodmap so that's worth bearing in mind if you've been lactose intolerant previously.

I'm coeliac and vegetarian, and it makes for difficult eating, in my opinion!

Today I had:
Porridge with fruit for breakfast.
Asda GF Crackerbreads with cheese and slow roasted tomatoes, plus an apple for lunch.
My version of a fry up, veggie sausages, h/m baked beans, mushrooms and halloumi. I did have a slice of toast with it, but I couldn't it eat it.

Crackerbreads and pasta are the only gf products I've found so far that I can enjoy. The breads are horrible, pizzas grim, crackers taste stale, I've found it all a bit miserable. I'll be reading the thread hopeful for inspiration!
