To try to educate my friend that she is racist

She keeps saying things like "I don't think white guys are attractive". Ive said in passing not to say that around people as its racist, she's replied with " no its not, I like them " and I've not challenged her more.

She is racist right? If she just said " I find brown skin very attractive" that would be totally fine to me.

In UK law white people most certainly can be the victims of racism. As can English people, Scottish people etc. And men can experience sexual discrimination, and straight people could experience discrimination based on their sexual orientation.
It is an entirely different thing to say which there is a bigger problem with - racism against black people is a much bigger problem than racism against white people, but on individual terms both are illegal.

To keep on saying 'I don't find X people attractive' is a sign of shallowness and stupidity. OP's friend didn't make this remark once, it is something she keeps on saying. How we speak about other human beings says a lot about us.

Many people try to keep fit and slim but and don't want to be fat, but wouldn't go around constantly saying 'I don't find fat people attractive.' It's just a nasty way to talk, especially if you are repeatedly saying it.

Isn't this a bit like saying those lesbians who don't find transsexual women attractive are transphobic bigots? If we've got to the point of policing individual sexual desire for prejudice against minorities then I really despair. Some things are private. Sexual desire is one of them. You can't have politically wrong sexual desires Confused

As an aside, I really dislike this use of the word 'educate' to mean 'lecture someone about how their thinking is wrong and immoral'.

How is it not racist telling a whole race they are not attractive?

You're twisting the wording into something false: attraction is purely subjective, there are no objective states of "being attractive" and "being unattractive". Therefore a race of people (or even an individual person) are not attractive or unattractive, but a single observer may be attracted or not attracted to them.

Beauty is in the eye of the beholder. Fairly well-known idiom.
