I’m making rhubarb fool for dessert next Friday (a birthday lunch). Would a shortbread biscuit on the side be a ridiculous addition or a welcome extra? I don’t have a sweet tooth so I’m not sure if I’m over doing things.

I think it's a good idea - a lovely crunchy contrast to the creamy soft fool.

Absolutely yes to the fool and the shortbread. A bit of orange zest in the shortbread would be especially nice alongside rhubarb.

I think it’s a great pairing, you could do a lavender shortbread to make it extra special. An alternative would be a coconut biscuit but depends on what the main is!

Thanks. Decision is made and the biscuits will be added.
My rhubarb in the garden has gone bonkers so it seemed like an ideal opportunity to use some and all those coming like it!

The main is a choice, fish pie or steak and ale pie - it’s a big lunch so I need various options. Shame I won’t be able to eat any of it as I’m vegan, but I’ll prep something for me too.

Pairing a shortbread with a fruit fool or posset type dessert is a very classic combination, and delicious!

Why not do steak and al pie
and then one of the many sublime vegan dishes available? So you don’t eat on your lonesome

Sounds delicious. You could also put a dab of ginger in the shortbread, that goes very well with rhubarb.

I would for some events, but I have the steak already, and the fish is ordered too so it just makes sense. I’ll have something tasty too.

I eat fish AND meat but I would LOVE the opportunity to try out an interesting vegan dish cooked by a vegan!
