I’m making rhubarb fool for dessert next Friday (a birthday lunch). Would a shortbread biscuit on the side be a ridiculous addition or a welcome extra? I don’t have a sweet tooth so I’m not sure if I’m over doing things.

I know that ginger is a classic combination with rhubarb, but IMO orange works even better.

Then it wouldn't be shortbread. The whole point of shortbread is the lovely buttery flavour.

As the OP doesn't eat sweet things and is happy to make non vegan food then she might as well make the shortbread with butter.

@PenelopeAsks you sound lovely, especially if you are prepared to cook non vegan food. Your vegan meal sounds delicious, and I wouldn't be surprised if your guests want to try your dish as well.

and no fool
and no short bread

all im saying is that something vegan would probably be appropriate!

My mil always makes brandy snaps with fool. It’s a delicious combination! Shortbread is nice too.

If you’re going to make a component vegan, surely you make a delicious vegan main rather than a sad compromise vegan shortbread. Especially when the vegan doesn’t like sweet things

If the OP isn't going to eat the biscuits anyway she might as well make them with butter. That is the point of shortbread. The biscuit recipe you linked to sounds nice, but they are just vanilla biscuits.

Sorry to be so pedantic, but shortbread is my favourite biscuit - because it tastes of butter.

I’d be more keen to have my host tuck in an enjoy something shared that she has made for us all to enjoy…. Than enjoy a buttery shortbread whilst the op looks on.

I don't disagree with you, but the OP said she doesn't have a sweet tooth, so I understood that she wouldn't be joining her guests in dessert anyway.

If she ia going to eat a biscuit or two then the recipe you linkes to is a good one.
