Clotted cream and a mass of it.

You cannot put that on jam. Doesnt work.

And you cant spread cream on top of jam, the jam just squidges out

It doesn’t for me, though it might depend on the type of cream as a pp said. Whipped cream here.
Much harder to spread jam on whipped cream than vice versa.

Because you can get more cream on top of jam - if I put a big dollop of clotted cream on my scone first the weight of the jam would cause bits of the cream to drop off the sides.
And it's scone to rhyme with "on" not "own".

I think you have a poor technique and need skon training

Jam first is a gateway to the abomination that is whipped cream.

Cream first, the very thickest yellow clotted, deep enough to show teethmarks and stable enough that an extra bulwark of jam can be knifed on with every bite.

I’ve got a fit of the vapours reading some of the comments, butter and whipped cream, what is this blasphemy? It has to be clotted cream. Or it’s not a cream tea, it’s some sort of poor man’s offerings.
fruit scones have butter or clotted cream.
cheese scones have butter and pickle or chutney, and a good chunk of the finest cheddar!
and agreed it’s skon not shown!

Nope, one bite of that and the jam squidges out. Even worse if its sort of firm jam, that will fly out straight into someones face, splat.

It didn’t - I ate it all perfectly fine. Nobody was splatted, apart from one of the wasps who were investigating with enthusiasm. Been eating scones like this for years - maybe I’ve just honed my technique perfectly to avoid cartoon-based disasters! Will have to continue the experiment next summer 😁

True but we go to my favourite tearooms for them in the summer so that’s when I most look forward to them! Just as well really considering the hundredweight of cream I pile on to them…

My MIL on the other hand is a proper devotee and pretty much always has the wherewithal for scones, jam and clotted cream in. She’s very well prepared.

Depends if you live in Devon or Cornwall. In Devon we do it the correct way which is cream first.

I am from South Devon and we always put jam first. And we didn't use scones, we had small sweet bread rolls. AFAIK scones were a Victorian idea which came in during the rise of tourism because they could be quickly produced on demand unlike bread rolls.

Depends entirely on the thickness of the cream and how stiff the jam is. Clotted cream with soft jam then cream first. Soft whipped cream and stiff jam would be the other way around.

Definitely this. Clotted cream is almost always on the bottom. Whipped cream is always on top of the jam.

Clotted cream is best obviously, whatever its consistency, and no butter thanks.

As for the vote, my brother lives in Cornwall, his wife is from Devon. Which goes first is not something I get embroiled in.

I know, it’s a disgrace, but if unexpectedly served whipped instead of clotted I’m still going to force myself to eat it. And there’s no way you’re going to get jam to stay on top of that.
