What do you have for lunch when you work from home?

I need some inspiration!

I can't be arsed cooking anything.

I've been through all the sandwiches.

I was on a scones vibe for a while but that's definitely passed.

I'm not keen on soup.

I find pasta a bit heavy for lunchtimes.

I really can't stand soft cheese in any way, shape or form.

We don't really have left-overs from previous night's teas.

The last couple of weeks, I've been having bran flakes, pears and yoghurt which is nice but getting boring.

What's left? What do you have when you're working from home?

Chicken salads, scrambled eggs, omlettes, cheese on toast, Rice crackers with toppings like cucumber, tuna, ham etc.

Oh, sometimes a jacket potato (i know that's cooking, but it's very easy cooking). I wouldn't do that in the summer when it's hot though as I wouldn't want to have the oven on for a long time. If you have an airfryer they do quickly in there.

I had scrambled eggs on toast today
If I get bored of sandwiches it somehow tastes better/different if I toast the bread. Or a bagel. Went through a pastrami/pickle/cheese/mustard phase

Mostly last night's leftovers, or I grill vegetables, toast a slice of decent bread and spread it with goat cheese and the grilled vegetables. Or flatbread and tahini mixed with Greek yoghurt. Falafel if I have any in the freezer.

Another one having scrambled eggs on toast!

I chop up a couple of cherry tomatoes, fry those off with a shake of garlic salt and a shake of mixed herbs, then add the eggs, stir to cook then grate some cheese over the top just before serving. It only takes 5 mins.

Other times I have those packets of flavoured cous cous which take 5 mins, with cottage cheese and whatever bits of meat we have in the fridge.

Soup and toast feature a lot in the colder months, along with toasties, and leftovers from dinner. If I'm cooking I always make enough for leftovers for DH and I to have for lunch the next day.

Never anything big as I find I don't build up an appetite the same way I did when I was leaving the house early, commuting etc. Plus I now have breakfast later.
Usually cereal or toast, crumpets, fruit, something like that. It is boring but I eat dinner relatively early (around 6) so it does me as a snack.

I’m working through the Green Roasting Tin cookbook & usually batch cook something for myself at weekends, then portion it out, freeze them & defrost whatever I fancy.

I usually have a big enough meal at lunchtime that I don’t want anything in the evening, but I’m just catering for me which makes it a lot simpler.

I always have things like olive, pitta bread, hummous, tomatoes, feta, tzatziki etc so make up a little platter

Yoghurt, blueberries, chia seeds and pumpkin seeds. Usually have this as a very late breakfast/lunch....and some days this is 3pm!

Since doing a new regime I now always have a massive chopped salad in the fridge (no dressing or it goes soggy) at all times to be available for lunch and dinner. It’s a game changer!

so: baby tomatoes, cucumber, fennel, sweet peppers, red onion (as a base); then grilled artichokes / beetroot, whatever you like and a simple herb dressing as you go. Top it up in the evening and you’re ready for the next day.

I then have the salad + grilled prawns or salad + grilled chicken or salad + halloumi.. or salad + tortilla… you get the gist.

Humous, with crackers or pita, and salad.
Poached egg on toast.
Avocado on toast with rocket and sun dried tomatoes.
Sardines on toast with a bit of hot sauce and some salad on the side.

I often have left overs. It's a good way not to overeat the night before by saving what might have been second helpings for lunch next day.

In winter, beans on toast or a small jacket potato - they cook in the microwave in about 10 mins.

If I'm not in a lunch mood, I just have a healthy second breakfast - yoghurt and muesli with berries. Or wholemeal toast and marmite and then a banana.

I alternate between:
making a larger portion of the evening meal,
Having toast with tomatoes, beans, egg, or mushrooms,
Soups,
Jacket potato and leftovers/beans,
Sandwiches or wrap with tuna mayo,
Omelette and salad,
If im making pasta for tea I'll make up an extra couple of portions and make a pasta salad and have it with chopped chicken /tuna and salad,
I sometimes make a curry or chilli for tea in the slow cooker first thing and then scoop a portion out and have with flat bread.
I've found the alternating different meals stops me getting board.

Depends on my day and how long i have to cook. Lunches this and last week:

  • whole packet of ginger nuts and an apple
  • spanish tortilla omlette thing from sainos with salad
  • omlette
  • filled roll from bakery down the road
  • toast and scrambled egg
  • tin of soup
  • bowl of salad leaves and some ham

My lunches are crap. I need to sort them out :(

Or in the winter, home made soup and crusty wholemeal bread.

Chicken ramen with Demae ramen noodles (like a posh pot noodle really with added meat and veg)

I’ve been using ChatGPT to suggest me a lunch based on what I’ve got in. I’m trying to concentrate on higher protein, and yesterday it gave me a great recipe for a Tuna and Bean power bowl.

Today I had chicken Caesar salad , sometimes I have poached eggs, savory rice / pasta n sauce if I’m feeling lazy and hungry! I do have a lot of left overs tbh! In the winter I make batches of soup and freeze so just microwave it or I have jacket potatoes. I also like beans or toast or cheese , sometimes a toastie. I do miss being able to wander out and buy yummy things already prepared for me!

@SingingSandscous Cous with cottage cheese? That sounds insane. I’ve never heard that combo before.

im very bored of my lunches at the moment which isn’t great because it means I’m eating crap

someone did introduce me to cottage cheese in omelette recently and that was amazing.
