What do you have for lunch when you work from home?

I need some inspiration!

I can't be arsed cooking anything.

I've been through all the sandwiches.

I was on a scones vibe for a while but that's definitely passed.

I'm not keen on soup.

I find pasta a bit heavy for lunchtimes.

I really can't stand soft cheese in any way, shape or form.

We don't really have left-overs from previous night's teas.

The last couple of weeks, I've been having bran flakes, pears and yoghurt which is nice but getting boring.

What's left? What do you have when you're working from home?

Greek salad is my favourite, with an obscene amount of feta and olives and good
greek olive oil. I could live on it.

Half a pack of Waitrose Cantabrian anchovies and half a pack of Waitrose yoghurt-based coleslaw. It’s quick, really tasty and surprisingly filling. I’ve just had four days of all-day Teams meetings, and that is how I survived.

I tend to always have meetings over lunch so I often just grab a piece of plain toast and shove it down in 1 min between calls.

At the moment I have a platter with any of the following that's available: crackers/bread/mini rolls, cheese, crisps, piccalilli/Branston, pickled onions, pork pie, hummus, olives, pate, ham, salad, egg, tomatoes. With a cup of tea.
Sometimes I have a sandwich or cereal or boiled eggs and soldiers.
In the winter I have soup and toast or jacket potatoes.

I either have poached eggs on smoked salmon on toast, or make a big salad at the weekend which lasts for several days. Or buy a wrap.

I don't wfh but when I was studying at home, I had pitta bread with red pepper houmous a lot, plus cheese and grapes. So quick and easy!

Oh, sometimes a jacket potato (i know that's cooking, but it's very easy cooking). I wouldn't do that in the summer when it's hot though as I wouldn't want to have the oven on for a long time. If you have an airfryer they do quickly in there.

Slow cooker jacket potatoes are the best!! I never do them any other way now.

wrap in tin foil and pop them in, flick the switch. So clean, too.

so lovely coming home to a jacket that's been slow cooking for about six hours in the crockpot on the smart switch

in answer to you question OP for lunch it is "X on toast" usually avocado.

I’m trying to lose weight so I’m making a point of making my breakfast and lunch for the next day before I go to bed. For lunch it’s mostly chopped salads, with tuna, hard boiled egg or ham and either bulgur or new potatoes. Today I had cucumber and cottage cheese: just used batons of cucumber to scoop up the cheese: I had made other things too but it was all I fancied.

I have the same as I would if in the office. Hell, sometimes I even tupperware it up the night before so it's ready when I break for lunch!

Tuna, salmon/prawns, cottage cheese, beetroot, cherry toms with pesto
Strawberries/raspberries, protein yoghurt

I'm in the office tomorrow and have the above ready in the fridge but have swapped the cottage cheese for goats cheese (living on the edge!)

Stuff on toast, often just peanut butter. Only do one day a week at home though. I like the bagel thins with cream cheese and sweet chilli sauce but don't always have it all in.

Usually something egg related -
poached eggs in toast,
avocado and scrambled egg wrap etc.
sometimes ramen noodles and broth with a soft boiled egg and random veg in (spring onion, thinly sliced broccoli and carrot etc)
ricotta and cherry tomatoes on sourdough..
oh sometimes a tin of mackerel!

Depends on my day and how long i have to cook. Lunches this and last week:

  • whole packet of ginger nuts and an apple
  • spanish tortilla omlette thing from sainos with salad
  • omlette
  • filled roll from bakery down the road
  • toast and scrambled egg
  • tin of soup
  • bowl of salad leaves and some ham

My lunches are crap. I need to sort them out :(

But they are definitely varied! Grin

I work from home but in a hot bit of the world. Kids are always home for lunch cos school finishes at 2.40 here. Obviously around now too in the summer. In the summer quite often i do chicken salad fajitas. Cut a chicken breast into strips, whack it in the hot frying pan with a bit of chopped garlic. While it's searing i make a salad of lettuce, tomato, black olives, Red pepper and avocado. Sometimes sweetcorn if i have it. Dress with oíl, vinegar, salt and pepper. Packet of tortillas warmed for one minute in the microwave. Then serve. If we have a jar in the house we spread caramelised tomato on the wraps as we assemble them.

I do a stir fry every day. I cook a few chicken breasts early in the week and then usually use just a lazy bag of pre-chopped veg. Bung it in with some fresh chili and ginger and soy sauce, sprinkle peanuts on top - it's super healthy and very quick.

Leftovers sometimes. If you don’t have leftovers, make some. It’s cheaper to make a bit more of something with ingredients you already have, plus time saved, then buying and making something new everyday. I often get through 2 days of lunches on leftovers from one dinner.

Staples are: salmon with veg (broccoli or french beans). I buy one packet of 2 salmon fillets plus 1 packet of green veg. That will do me 2 lunches with a bit of salad or fruit on the side.

Ready made noodles. I buy the vacuum packed cooked noodles that you just microwave. £1 for a 2 pack. I have those with some mix of miso, soy sauce, sesame oil, peanut butter, plus coriander and whatever fresh veg (grated carrots, cucumber, beans, any leftover veg from dinner). Sometimes I add fried or scrambled egg.

Otherwise, a nice big salad. Not MN massive because that would be too massive for me. But a normal sized one with some protein.

chocolate bar!

if i miss breakfast, maybe skip lunch and have breakfast (porridge & banana) later

chip cob & mayo

im not the best cook and terrible at thinking ahead about food! 🤦🏻‍♀️

For me, cheese and ham is the best!

I once spent a whole night chucking up cheese and brocoli Pasta n Sauce into the gutter (mostly) and my own shoes (accidentally). I've be off it ever since. That was 2006 so might be time to give it another go!
