What do you have for lunch when you work from home?

I need some inspiration!

I can't be arsed cooking anything.

I've been through all the sandwiches.

I was on a scones vibe for a while but that's definitely passed.

I'm not keen on soup.

I find pasta a bit heavy for lunchtimes.

I really can't stand soft cheese in any way, shape or form.

We don't really have left-overs from previous night's teas.

The last couple of weeks, I've been having bran flakes, pears and yoghurt which is nice but getting boring.

What's left? What do you have when you're working from home?

For me, cheese and ham is the best!

I once spent a whole night chucking up cheese and brocoli Pasta n Sauce into the gutter (mostly) and my own shoes (accidentally). I've be off it ever since. That was 2006 so might be time to give it another go!

scrambled eggs on toast
avocado on toast with poached eggs and salsa
sardines and tomatoes on toast
cheddar and chutney on toast
burrata and tomatoes on toast
It's all very toast-based.

I tend to do a constant rotation of the same few lunches at home but they're all tasty and very quick.

Toast with avocado, hummus or peanut butter.

Omelette.

Tin of soup.

Yoghurt with berries and nuts.

Gyoza (Costco sell them in big bags to keep in the freezer, 6 chucked in a lidded frying pan with some water to steam takes 5 mins.) I have them with soy sauce to dip.

M&S sell individually wrapped portions of cheese on a 5 for £4 deal so I get a selection of those and often have one with oatcakes and fruit.

nothing at all I eat breakfast early and then I’m too busy to eat in the middle of the day so tend to now eat earlier in the evening than I used to

Mezze. Olives, hummus, pitta, sunblush tomatoes, halloumi, falafel. It takes five minutes to throw together 😊

I mix up a tin of mixed beans, chopped up pickled beetroot and some bits of Jars of artichoke/peppers with a bit of salad dressing. I have a tub in the fridge and eat it over 2-3 days depending how hungry I am and whether I eat some tinned tuna or chicken satays with it. It’s my staple.

Current favourite is flatbread with chicken/mayo/grape or ham and coleslaw. Sometimes a jacket potato or scrambled egg. Liking the inspiration here, I get bored but most normal bread makes me windy and even working alone at home, nobody needs that…

I’m retired but busy. I almost always have a boiled egg with Ryvita or toast then another slice of ryvita with marmite and an apple. Boring but true.

I made a quiche, big bowl of coleslaw and jacket potatoes for this week's lunches. Works for me.

I sometimes deliberately make dinner with leftovers for lunch in mind.
Meatball & roast veg sarnie, anyone ?
(I'll gloss over the cold H/M pizza, that's for brekkie.)

Usually eggs of some sort. I like making frittatas and then just eating them over a few days. Today i had boiled eggs and oatcakes. Tomorrow will be scrambled eggs because DS1 has decided he is making lunch.

I usually have bread/bagel/pitta bread with humous, olives and salad, and occasionally crisps, followed by fruit. Sometimes I have a soup or last night’s leftovers.

I grate carrots and cheese, chop beetroot and radishes, slice celery, add lettuce and hummus, then mix together and add vinaigrette - so tasty.

What about the Buddha bowl concept that brings together some kind of grain/carb, protein, vegetables, and tasty toppings? I often make a big bowl of Turkish bulgur wheat salad that we can use as a base all week, with eg cubes of feta, olives, cucumber, tomatoes, olives, pomegranate seeds or whatever’s in the fridge.

I have the same thing almost every day which I realise is boring. Salad with feta and a boiled egg. I do vary the veg and nuts/seeds that go in it. Then I usually have some cheese and crackers or a banana at 4pm. At the office I have a salad or sushi unless we go for a client lunch. In the school holidays when the kids are home we have soup or jacket potatoes as they don’t like salad.

Homemade lentil and ham soup from freezer
Egg mayo with chives on dry toast (we always have some hard boiled eggs in fridge)
Poached eggs on toast
Cheese omelette with some bagged salad on side
Bacon medallion sandwich (bacon done in air fryer)
Precooked salmon fillet, hard boiled egg and bagged salad and some chilli sauce

A basic fajita. I air fry thin strips of chicken with thinly sliced mushrooms and peppers and sprinkle over the spices powder a bit into the cooking.

I do a fairly large amount (ie enough for two or more)

I freeze the tortillas with a bit of greaseproof paper in between each

I freeze some of the chicken mixture in individual small tubs. Basically enough for one serving. Another servings goes in the fridge.

Then, when I want lunch, I’ll take a frozen tortilla and put it on a plate, then I add the chicken mixture from the fridge and place it down the middle of the tortilla.
Then I microwave it for one to 2 minutes

spoon over some salsa, roll it up and eat it

The rest of the salsa I put in a clean jam jar in the fridge for another day.
I often have it two days in a row put sometimes I will actually eat two if I’m hungry
