Tonight’s massive salad

Anyone doing an MN massive salad?
Here’s mine. Kept the broad beans separate because they’re a bit old and I’m the only one who likes the old ones.

I've not made mine yet but it'll be a massive Chicken Caesar Salad. Including a ready made dressing because I'm not doing anything in this weather but the most basic assembly job!

Thanks! Ooh I love a chicken Caesar but dp is pescatarian and I eat what he does mostly.

I felt like this needed a fancier dressing than oil and vinegar so have gone for oil, red wine vinegar, Dijon mustard, lemon juice and honey.

We too had a big MN salad.
We put some strips of ham in as well as the hard cooked eggs, some leftover Feta and a sprinkle of Parm.
Baby kale and lettuce from the garden, radish, peppers, and grated carrots for colour, some minced onion and garlic, also from the garden.

We had one for lunch - but it was a cold early summer vegetable one. I had a bunch of yellow and purple carrots that needed using up and a bag of French beans

yep, it was a bit of an odds and ends job based on what was in the house so ended up being:

Salad leaves I’ve been growing in the garden
chopped up pickled beetroot and jalepenos
some spicy bbq pulled chicken, sweetcorn and sliced peppers I found in the freezer.

Awe, I thought I was the only one who does MASSIVE salads…. Mine are usually around 5000 calories once I’ve added croutons and a litre of dressing 😳

I had one for lunch- spicy rice, boiled egg, cucumber, cherry tomatoes, beetroot and apple.
I'm having chip shop for tea.

I even have a photo album of all my favourite massive salads and sandwiches 😍🤪

I'd love to go to India. Not the cities so much, but the hill stations, foothills of the Himalayas etc.

That looks delicious! I love a salad. Tonight we're having halloumi burgers with roasted red pepper, hummus and sweet chilli sauce with coleslaw and a salad, but just lettuce, peppers of various colours, cucumber and spring onion. We will have a nice big salad for lunch tomorrow I think!

My massive salad was very loosely based on a Greek salad, white cabbage, spring cabbage, spring onions, baby tomatoes, grilled mixed baby peppers, bacon, feta, fresh mint and parsley, vinaigrette, lamb burgers

Yes - toasted walnuts & pine nuts, vegan feta, beetroot, salad leaves , cucumber tomato, and a simple home made dressing

I had lettuce, avocado, tomatoes, chopped onion, blueberries, strawberries, cucumber, dill pickles, peppers, olives and dried fried onion. Didnt take a pic as I scoffed the lot!!

Someone will be along to say that it would feed their family of 6 for a week !
Neighbours have invited us for a BBQ so I am taking a MASSIVE bowl of salad .

Mine (or rather DH's- he's cooking tonight) will be salmon, cucumber, new spuds, shredded white cabbage, lettuce, broad beans, tomatoes and black olives. With a chilled glass of sauvignon in the garden 😋

I’m going to have a massive salad too, except mine is going to be a Chinese special salad made of chicken in satay sauce and fried rice. Might even get some of those white croutons…I think they’re called crackers 🤔

I've got a cauliflower, courgettes, red onion and tin of chickpeas with plenty of garlic, cumin, nigella seeds and ground coriander, in the oven as I type. It will be served over mixed leaves with celery, cucumber, red peppers and pickled red onion. Mint yoghurt dressing on the side.

My kinda dinner with a glass of red.
