God Im fed up of hearing about 'sourdough bread'.

I love sourdough but agree plenty of people seem to feel the need to talk about it or bring it up often which is bizarre.

Sorry but it is much better. Sourdough toast with loads of butter is the ultimate pleasure. Plus, it goes stale when it's old like bread is supposed to. The stuff in packets from the supermarket stays soft and grows mould. That shows you how much it's been modified from what bread is/should be

I make Sourdough at home but it's a well kept secret. Once people find out, they want a loaf. Then they want another.

Sounds like people are eating some pretty average Sourdough

I’d be very surprised if that was the case. My mum grew up in a family of self-sufficient farmers (out of poverty, not a lifestyle choice) the kind of which still existed in our country in the 50s. The only bread around was sourdough. People in the village would borrow starters off each other when/if they ran out. My mum’s family baked their bread weekly and it kept ok for the week. I’ve just read in Wikipedia that commercial yeasts became available in the 19th century - before that it would have been sourdough, and in some places the habit just wasn’t totally lost. So it’s definitely not a fad. Wikipedia adds “At one time, all yeast-leavened breads were sourdoughs.”

When I had a cgm sourdough gave me just as big a glucose spike as regular supermarket bread plus you only get the microbiome benefits from the kneeding process as they are all killed off in cooking. Sadly I don't think any bread is a health food.

It's all fucking crust anyway. You know, the bit you hold onto when you eat the bread itself. The bit you throw in the bin because you don't want to put hairs on your chest.

Back to sourdough, fucker is always flat. Rubbish for a packed lunch.

Is it culinary grade? Does anyone know what blueberry syrup Blank St uses? Is Black Sheep as good as Blank St?
How long do I need to soak my chasen for? What’s the best temp for the water? 3g or 4g of powder?
Perfect Ted is too mass produced, I’ve found this amazing Uji matcha from Koyoto . Uji has a much more distant flavour than Yame, much more umami.
