God Im fed up of hearing about 'sourdough bread'.

90% plus of the population eats commercially produced shop sliced bread at least most of the time (I do buy sourdough but only occasionally!) it just isn’t post worthyGrin

I’d be very surprised if that was the case. My mum grew up in a family of self-sufficient farmers (out of poverty, not a lifestyle choice) the kind of which still existed in our country in the 50s. The only bread around was sourdough. People in the village would borrow starters off each other when/if they ran out. My mum’s family baked their bread weekly and it kept ok for the week. I’ve just read in Wikipedia that commercial yeasts became available in the 19th century - before that it would have been sourdough, and in some places the habit just wasn’t totally lost. So it’s definitely not a fad. Wikipedia adds “At one time, all yeast-leavened breads were sourdoughs.”

Before the commercial production of yeasts people got yeasts from brewers.
In the UK there was a long history of beer and ale brewing being absolutely ubiquitous, first domestically and then on a larger scale after hops were introduced which made it keep longer.
It’s not entirely clear to what extent people kept their own culture going as with sourdough or how often they would take the froth off the fermenting ale (‘ale barm’).
In great houses the brew house was typically next to the bakehouse as the warmth from the oven would help the ale to ferment.
I did it with a medieval ale I brewed in January but the bacteria had got into the ale so the bread I made was actually like sourdough, but it worked. A friend of mine did it more successfully at a Tudor reenactment we were at over Easter and the bread was more traditional English bread tasting.

It’s not a fad. It’s the kind of bread everyone used to eat before processed supermarket bread was invented. I keep mine sealed in the fridge and it stays fresh for a week.

No it’s not. Sourdough and Chorleywood are not the only two bread making methods. Before Chorleywood most bread was made the way you make non-sourdough bread at home with fresh yeast.

The sour taste isn’t for everyone.

I'm obsessed with it with poached egg, avacado and prosciutto ham!! I eat it every day for breakfast on work days and if I'm feeling extra healthy I'll put asparagus and spinach with it. I also have shop bought flatbreads in the bread bin because I failed miserably when I tried to make them and for dinner I had a tuna mayonnaise and cucumber sandwich on sliced white because I couldn't be arsed to make the seabass like I had planned. It really wouldn't have been the same on sourdough, it's too chewy to have as a sandwich.

It's not something I tell people unless they ask me what I had for breakfast in the same way if I had a wrap I would say I had a wrap or a ciabatta I would say I had a ciabatta.

The list of ingredients on the back of supermarket processed bread is as long as your arm. Basically it’s not good, it’s a chemical concoction made to look like something we once recognised as food. On the other hand my local sourdough has 3 ingredients. Flour, water, salt. It doesn’t bloat me or make me feel ill. Try it you might become a convert!

@suah yes you are correct! In fact sourdough is such a varied process that it was not until yeast became readily available from brewers that bakeries selling bread became a thing. Before that the result was just too unpredictable. Which is entirely my experience of making sourdough.

Toasted to oblivion or lightly and slightly claggy?
