I genuinely don't think I could narrow it down that much.
Sea salt, pepper, chilli, ginger, garlic & onion are absolute dealbreakers. Without some or all of those in one form or another, there is no dinner.
Herbs - probably narrow it down to fresh coriander, rosemary, thyme, parsley and mint. But then there's wild marjoram and basil in summer. And the angelica & lovage for cooking with fruit and soups respectively.
Spices - cumin, coriander, cinnamon, turmeric. But that excludes sesame, poppy seeds, caraway and all of the blends. And where would we put the condiments, vinegars, hot sauces, fish sauce, wasabi, tamari and other things like lemon, lime, juniper and anise?
I'm not deliberately being a food wanker, but I can't - or wouldn't - be able to pick just three herbs and three spices, as they are in practically everything we eat.
And now I've been reminded of nutmeg, bay, mace, allspice and everything there that goes into sweet and savoury foods - sorry, OP, I can't do it.
