We're having a roast dinner tonight (without the meat!), first time I've been bothered to do one in a while. We don't have a substitute but a lot of potatoes!

The usual, stew, packed with veg, broth mix and pearl barley, minced beef cobbler, big roast dinners and things like spaghetti bolognese and chilli!

I've been using things I've grown in the garden, so having this beetroot tart with steak and other veg tonight (never made it before though):

Baked kuri squash either in slices, or for the small ones, I slice in half, remove the seeds and fill the cavity with savoury rice or cous cous. Add some cheese on top and bake.

This is one of my favourites for Autumn:

To edit my meals 😄
We've made the butternut pasta without chicken and it's as delicious. Spicy broccoli and cheddar soup. Lentil and veggie soups. Bean chilli's. Squash and sage risotto with parmesan. Maccaroni and cheese that's spicy/has truffle, broccoli/garlic bread. Garlic mushroom and sage gnocchi.

I've got a BBC Good Food pumpkin, farro and borlotti bean soup on the go for lunch at the moment. It's much more like a stew and I'm looking forward to it.

Weather is horrendously wet and windy here, so the soup/stew looks excellent.

Oh, and pasta with squash & leek fried till caramelised then some crushed garlic added & pan deglazed with a bit of balsamic vinegar, usually add some blue cambozola (spp?) cheese if I remember to get some

I saw this thing on insta that I’m gonna try, was basically:

Mediterranean veg in the slow cooker, cook for a bit.
Blend that down into a sauce.
Add stock, herbs etc.
Add in macaroni and a shit ton of cheese.

Few hours later, voila! Macaroni cheese but with 5 a day in! (Doubt it’s actually 5 portions of f&v)

Curried pumpkin soup which can be made with any type of squash is very filling. I also make a lot of curries with frozen butternut squash & tinned chick peas.

For a lazy dahl type thing add cubed potatoes & red lentils to onions & spices then add tinned tomatoes and cook until the potatoes are soft.

We had lentil cottage pie last night, vegan kebab meat with roasted red pepper sauce and salad tonight. I've also made chickpea chilli for midweek.
Looking for inspiration for using up butternut squash too.

Most of my suggestions were veggie, but please ignore the pea/ham soup and beef stew I also mentioned. Sorry OP.

Last weekend I made a traybake which was sprouts, butternut squash, carrots and beetroot, roasted, then dressed with a mix of maple syrup, Dijon mustard, and balsamic, then topped with crumbled bacon and torn buratta. We had it with roast chicken.
