I also missed the veggie bit. Obviously just leave out the bacon and chicken. Would still be amazing on its own.

Vegetable cobbler. Veg stew with whatever you've got (we're not actually vegetarian so I'll add a couple of tinned anchovies which will disappear and provide delicious umami) with cheese scones on top.

Ratatouille with crusty bread.
Cauliflower cheese and roast potatoes.
Gratin Dauphinoise and green beans.
DH also makes a Turkish lentil soup with flatbreads. I'll try and find the recipe...

Not very healthy but cheese, onion and potato pie with mash and broccoli. Non veggies have a chicken pie, I love making them

Just had my Sunday lunch before I sit at my desk. A Sainsbury's Vegetable soup with pearl barley in it. Yum! Plus I fancied something sweet so the vending machine gave me a Deliciously Ella Apple and raisin oat bar.

Just eating a bowl of a big pan of adapted minestrone soup. I add lentils to it to make it more filling. Also have done some tofu with soy and Korean chili paste to mix through noodles and stir fry tonight. These are also work lunches this week.

Also roasted butternut, goats cheese and thyme tartlets. I use butter it pesto as a base. Delicious with a tomato salad.

Sweet potato and black bean stew. I found it last year online on the Healthy Living James website. It's delicious. We are not keen on kale so usually sub spinach. Also great freezer standby as I use frozen sweet potato chunks and spinach.

Cheap and cheerful here, pinto and kidney and black beans (slow cooked with smoked chilli, garlic, bay leaves, oregano, cumin, lime, maple syrup, smoked paprika) served with buttery baked potatoes and sharp cheddar cheese.

I'm also planning to adapt a Nigella pasta bake recipe with potatoes, Brussels sprouts and wholemeal pasta. It's cheesy but I'll make it with a vegan sauce. Love double carbs in autumn!!

Potato bake! A family favourite is sliced potatoes layered with mushrooms and spinach, cheese on top.
For ease use same cream mix you'd use for dauphinoise potatoes potatoes but add a bit of nutmeg.

I had a really nice veggie tray bake tonight with all sorts out of the veg drawer that needed using up! Just before serving I added a generous spoon of chilli pesto, and I had green beans and Linda McCartney red onion sausages. And the bonus is that there's enough for lunch tomorrow with cream cheese and a low carb wrap.

Other winter staples are veggie chilli, and this from Bosh is divine - even DH eats this and he's a dedicated meat eater. www.bosh.tv/recipes/one-tray-pasanda

Just made tarteflette. You could substitute the pancetta for leeks. Delicious. And my go to is roasted red pepper tomatoes and chilli soup with creme fresh.

going to make a Thai red curry tomorrow with a bunch of veggies I need to use up, some red curry paste and a tin of coconut milk plus some noodles

Lots of stuff with extra portions to go in the freezer. Lentil Soup, Leek and Potato Soup with Cheese and Pumpkin Seed Scones, Green Lentil Mousaka, Root Veg/Cauliflower and Broccoli Dahl, Ratatouille, Mushroom and Paneer Bhuna, Leek, Cabbage and Butter Bean Crumble.

this week I've done sausage squash and apple tray bake, creamy mustard chicken with mushrooms, squash and mushroom curry, beef and butter bean casserole with red wine, Red pepper and tomato soup with toasted cheese and onion sandwiches and chestnut and mushroom pies.

Sorry edited to say I missed the veggie bit too, but the sausages could be veggie ones, the chicken could be a tin of white beans, and the beef stew could be made with some sort of meat substitute like soya or quorn.
