We tend to stick to stir fry’s, curries, fajitas, roast veg tray bakes, soups, frittata.

What I find tricky is how many veggie recipes include cheese (makes me gag). Or revolve around carbs (eg pasta bake, risotto) instead of the carb being a side dish.

It can actually be harder to eat healthily as a veggie.

Personally not a fan of the veggie mince etc - very processed and some have a high salt content.
