Cheesy pasta

Possibly the most pointless post 😂
so I always see ‘cheesy pasta’ thrown out as an easy midweek dinner for kids but I don’t know what it is.
Are we talking full on macaroni cheese or literally just pasta with some grated cheese on top?
Give me your how to’s on cheesy pasta!

Pasta. Stir in tomato sauce. Grated cheese on top. Under grill for a minute or two to melt it.

A really quick one I do for myself is
Fry off some chopped bacon, add creme fraiche, stir, add grated cheese, stir until it makes a sauce
You can add cut up courgette, tomatoes, skip the bacon and add ham or cooked prawns, add pesto...

Cheesy pasta for us is pasta, tomato sauce, and cheese mixed together on a low heat until gooey!

When mine was little it was pasta mixed with butter , dairylea and grated cheddar . Would mix in some peas and ham if feeling fancy 😀

If you're feeling filthy, use marmite instead of tomato sauce. Mix in cheese and melt it. 😋
(this is more of a guilty adult pleasure than a midweek kids' dinner though)

We don't make a cheesy pasta as a standard meal but when I was at uni it was the Kraft package for my flatmate. She ate it so often. My cousin gives the tinned macaroni cheese to her son.

I used to love pasta with cheese growing up but then I ate it too much as a penniless student which absolutely ruined it for me 😁

For us it would be cook pasta and drain, throw in soft cheese, some milk, grated cheese. Melts and makes a cheesy sauce on the pasta.
DS likes it with tuna and sweetcorn thrown in but I like it just cheesy

No tomato 🤮
Cheesy pasta here is pasta, butter and a lot of grated cheese. Sometimes fried bits of bacon or pancetta too.

But definitely not any tomato sauce. That would be tomato pasta which DD will eat but I won’t 😂.

I've discovered a new way of doing 'cheesy pasta' and it's honestly such a winner:

  • boil pasta as usual
  • while it's cooking, put several large hunks of proper butter in the bottom of a big bowl
  • when pasta is cooked, pull it out of the water and drop it directly into the bowl of butter (ie still dripping wet), reserving the pot of hot water
  • stir the pasta in the bowl to melt the butter
  • add a large handful of grated Parmesan and a bit of the reserved cooking water, mix
  • add more Parmesan and cooking water until you get a nice creamy consistency
  • add salt & pepper to taste and EAT

Couldn't be easier and my DC (and I) love it

I like the cheese to be cold, just sprinkled on top at the last second. Same with chips.

My easiest cheapest one is:

Cook some spaghetti and drain.

Chop a small white onion and fry in a little oil. When it is coloured, and a spoon or two of tomato puree and possibly a little water to loosen it into a sauce.

Stir in the pasta and fuck loads of grated cheddar and eat.

If sounds grotesque when I write it down like that, doesn't it? Like a big wodge of uncooked puree, pasta and cheese. It's actually nice. Comforting.

Our version is cook and drain the pasta, put pasta back on the pan and add a bit of butter and grated cheese on a low heat and mix till melted then stick in a bowl.

Cheesy pasta to me is either pasta with a bit of olive oil, garlic, loads of grated cheese and black pepper, sometimes I put cold chopped cherry tomatoes in it. Or, pasta coated in Philadelphia for a quick meal with smoked salmon and black pepper 😋
