What's for dinner?

Today I am home 2 hours earlier than anticipated so have decided to treat us all with a 'proper' meal (rather than a rushed one).

Salata tricolore
Steak with mushroom sauce, wedges and green beans
grilled fresh apricots with honey and vanilla ice cream
cheese board with grapes and walnuts

Undoubtedly the Dcs will moan and ask why they aren't having pesto pasta with peas and DH will say; 'Do we have to sit at the table, I'm knackered and want to watch The Simpsons' but until either of those things happen I am going to pretend that we are a sophisticated European family like what exists in my fantasies. Grin

What is everyone else having?

Mushroom risotto with a variety of different mushrooms and I’ll cut up a few chicken breasts.

DD5 and 2 do well with this dinner!

It’s cannelinni beans in roasted tomato and pepper sauce with ricotta and some sausages. Bit of a fridge raid dinner!

The mash and root veg mash are out the freezer from a batch cook session I did a few weeks ago, and the cauliflower cheese is just a bought ready made one. So no prep really today.

Chipotle chicken I put in the slow cooker this morning. I took the chicken thighs out and pulled them, blitzed the sauce so DC didn't spot the peppers and put the chicken back in. DC already on seconds!

I'll have mine at room temp with some rice later. I'm loosely following the "one new recipe a week" thread in Food and it's good to tick it off on Monday!

A beef taco recipe from the Spicery taco book, with soft tortillas, refried beans and the amazing M&S layered Mexican dip. The Spicery is so great for turning not very much into something lovely, I'm a big fan. Dinner has just been inhaled in super quick time by my two DSs!

Hunters chicken with veg, followed by strawberries and blueberries with cream. It's cold and wet here today, so wanted a hot meal but making the most of the berries while they're in season and actually taste good

Made some cheese scones and butternut squash soup followed by a chicken stir-fry with a choice of noodles or rice. Been v busy with studying so am demonstrating my love through food!

Pasta with slow cooked courgettes and slightly too much chilli. It's one of my favourites and it's so easy. The slightly too much chilli is essential.
