What's for dinner?

I am very excited about our dinner today- maximum easy points and delicious.

Just a burger with lettuce, tomato, onion, plastic cheese, Aldi herb and mayo burger sauce, gherkins and I am adding griddled pineapple as well which since having that as standard in Australia has become my favourite burger topping.

Served with jacket potatos where I scoop out the middle, mash with loads of butter, salt and top with cheese and then grill again so the cheese goes all melty.

It feels very self indulgent and I've not had a burger in weeks. DCs will love it too.

Tomorrow will be our usual Sunday dinner. Chicken noodle soup using up the chicken I roasted yesterday.

What's for dinner at yours?

Salmon en croute (not homemade sadly)
Roast potatoes
Courgettes & asparagus
Parsley sauce

JerseyRoyals · 05/05/2024 15:17

oooh parsley sauce....., I love a good parsley sauce.

Hmmm. Salmon en croute. I might make that this week. (or at least Mr Aldi might- they have a delicious one).

Thanks!

Honey Mustard Chicken thighs, some kind of potato, (haven't decided yet), and asparagus. I realised yesterday that I have an inordinate amount of chicken in my freezer, so it's chicken for dinner for the foreseeable.

JerseyRoyals · 05/05/2024 15:20

Oh I love honey mustard chicken.

It;s been ages since I have felt like cooking is anything but a chore.... this is inspiring me!

A roast chicken, goose fat potatoes, cabbage, broccoli, cauliflower cheese, carrot and swede mash, honey parsnips, Yorkshires, gravy and I'm sure some other bits I've forgotten! 🤤 can't wait!

GiveMyHeadPeaceffs · 05/05/2024 15:29

Roast lamb, roast potatoes and a veg medley of tenderstem broccoli, pamphrey and peas with homemade herb butter. Cherry pie and homemade vanilla ice cream for dessert...I'm drooling just thinking about it 😁

JerseyRoyals · 05/05/2024 15:30

I've just finished the gorgeous roast beef dinner DH made, and I'm steadily ploughing my way through a Magnum Classic 😍

CarolinaInTheMorning · 05/05/2024 15:38

No idea. We just finished breakfast (I'm in the eastern US). But last night DH cooked steaks; we also had salad, corn on the cob and key lime pie.

I might just have leftover key lime pie.

JerseyRoyals · 05/05/2024 15:41

I've done a rough first draft meal plan. until Thursday

Monday- chicken noodle soup
Tuesday- slow cooker gammon with pineapple and vegetables
Wednesday- croque monsieur using leftover gammon and a tomato onion balsamic salad
Thursday-prawn and tomato risotto with green salad

I do a roast chicken every single week and then have chicken noodle soup with garlic bread. The Dcs have come to rely on it (or at least that is what they tell me).

Toad in the hole with aldi caramelised onion sausages and onion gravy and roast potatoes and a veg medley, apple strudel with custard. The only thing I dont make is the custard. I can never get it right.

Pan-fried tuna steak
Roast asparagus and tenderstem broccoli
Hard-boiled egg.

On a diet, can you tell 😆 Really fancy some chocolate buttons or maltesers

CommeIlFaut · 05/05/2024 15:52

These are all making my mouth water!

We are having slow braised lamb with tomatoes and borlotti beans. Served with cavolo Nero and mash. With glass of Pinot noir.

Lemon sorbet for dessert.

SplendidRhododendronsDeirdre · 05/05/2024 15:53

Greek chicken gyros

chicken has been marinating since yesterday in yoghurt, garlic, lemon and herbs

Served with warm flatbreads, homemade tzatziki, cucumber, tomato and lettuce.

I may go fancy and wrap them nicely in greaseproof paper

greengreyblue · 05/05/2024 15:54

Your burger sounds tasty op. Can’t imagine it with baked potatoes though, fries would be my choice and a salad.
Today we are having griddled pork fillet medallions, roasted med veg , pitas and yoghurt and mint dressing.

Pinksmyfavoritecolour · 05/05/2024 15:58

Charlie Bingham chicken tikka masala, few days of no husband home, so been enjoying easy cooking, looking forward to a belated roast Tuesday eve when he gets home.
Some of your meals sound delicious, making me hungry.

ghostbusters · 05/05/2024 16:05

Salmon, probably pan fried with a creamy/cheesy sauce with either pasta or potato wedges and whatever veg isn't rotten.

onwardandupwards · 05/05/2024 16:08

Roast lamb, garlic roast potatoes, brocoli and carrots, homemade mango and raspberry cheesecake for after, tomorrow is gammon, eggs and chips

AtleastitsnotMonday · 05/05/2024 16:11

I've got chunks of chicken breast marinating in yoghurt and tandoori paste. I will be threading them onto skewers and cooking them later. To be served with yoghurt flatbreads with added Nigella seeds for a naan vibe, an onion salad, an Asian carrot salad and a green salad. Plenty of mango chutney and raita along side.
Yummy, easy and enough elements for people to pick the bits they like.

stronglatte · 05/05/2024 16:22
