What's for dinner?

I am very excited about our dinner today- maximum easy points and delicious.

Just a burger with lettuce, tomato, onion, plastic cheese, Aldi herb and mayo burger sauce, gherkins and I am adding griddled pineapple as well which since having that as standard in Australia has become my favourite burger topping.

Served with jacket potatos where I scoop out the middle, mash with loads of butter, salt and top with cheese and then grill again so the cheese goes all melty.

It feels very self indulgent and I've not had a burger in weeks. DCs will love it too.

Tomorrow will be our usual Sunday dinner. Chicken noodle soup using up the chicken I roasted yesterday.

chicken cacciatore minus olives as no one likes them. Was wonderful.

Posted earlier but changed our meal slightly. Had marinated chicken skewers ,grilled. Air fried sweet potatoes, toasted pita, rainbow salad with added nuts and seeds, yoghurt dressing, hummus.Shared a bottle of Savvy B with DH also.

Curry on it's way - poppadoms, mint sauce and lime pickle, saag paneer, prawn dhansak, rice and a garlic naan.

Homemade stilton and broccoli soup, with thickly cut toast made from homebaked bread with lots of butter. It was delicious.

I think I'm having pizza... the Woodford M&S ones that are relatively low calorie.

I had an un expected lunch at Wagamamas so the planned peanut chicken stir fry feels too similar.

Tomorrow might be the stir fry, or ricotta stuffed pasta shells on a bolognese base.

Roast chicken dinner with roast potatoes, steamed cauliflower and broccoli, Yorkshire puddings and roast chicken gravy. Tesco sent me a rather large one this week (nearly 1.9kg!) so I'll have leftover roast dinner veg and such for a couple of days and have several yummy chicken sandwiches and things for my lunch at work this week.

Well I WAS going to have a Hugh F-W recipe that involved the jar of artichoke hearts that I could have sworn were in the cupboard but turned out not to be, so prawns in pasta sauce and rice.

Made an easy chicken and chorizo rice dish - sliced chorizo and chicken chunks cooked together, then added a chopped onion and pepper, cooked till soft and added a packet of microwave rice, chopped fresh coriander, juice of a lemon, a splash of soy sauce and some chilli flakes. It was lovely and very easy.

5 yr old DD just picked out the chicken and ate that dunked in mayo but I will take that as a win.

I was going to do 'roast chicken' but with chicken breasts, bacon, sausage etc, one to eat today with roast potato, one for a salad tomorrow, but the thread about eating 30 plants challenged me and I ended up picking lots of bits of things in the garden and having a 24-ingredients salad with some pastrami instead. I'll do the chicken tomorrow.

A salad made with cous cous, chick peas, roasted red and yellow peppers, garlic and tomatoes, fresh basil, spring onions, fried halloumi and dressed with olive oil and lemon juice, with some crushed cashew nuts on top for a bit of crunch. On a bed of green salad leaves.

I made jambalaya with yesterday’s left over chicken, with chorizo and loads of veg (courgette, pepper, celery, peas, spring onion and tinned tomatoes).

While that was cooking I stuck a bolognaise in the slow cooker as there are lots of repeated ingredients (celery, onion, carrot, pepper, courgette and passata).

It was a mad 45 minutes sorting all that, plus doing 2x sets of homework, but tomorrow me will be very grateful as I arrive home and then rush back out for clubs!

Pork belly with cider reduction, roast potatoes, stuffing, kale, carrots, roasted leeks and red onions, and swede.

It's our Sunday roast a day late and using up last week's veg.

Pan-fried whiting with broccoli and cauliflower, and some wilted chard and spinach with garlic. (Includes the steamed cauli leaves, because why would anyone chuck those out?)

Steak pie, could be epic, could be a disaster - the DC made the pastry!

With mash, savoy cabbage, cauli, carrots and broccoli.
