Interesting jacket potato toppings

I WFH and so bored of the same meals every lunch. I am fortunate to have a Tesco local nearby so can pop in for a meal deal, etc etc.

Today went in and got 10 large baking potato’s for £1!!! I batch cooked them in the oven, and now have many jacket potato’s to reheat…

So what’s your fav “interesting” jacket potato topping.

today I had cottage cheese with chives, and tomorrow it’s tuna and cheese. Not very interesting!

I am thinking mackerel and hard boiled egg one day….

Chicken curry. Korma works nicely.

Sometimes I like cottage cheese and crispy bacon.

I love chilli in a jacket, but I also like pilchards/sardines in one too. The latter is slightly more unusual.

My favourite is cheese beans and tuna mayo! Bit weird but I like it!!

Mackerel but with spring onion and Mayo (we add chillies too)

Cook some fish, scoop out the inside of the spud and mix with the fish, creme fraiche, parsley and peas. Scoop back in, grate a bit of cheese on, back in the oven. It’s like a fish pie but far less faffy.

I like them with:

3 bean chilli
or
regular chilli
or
just lots of cheese
or
coleslaw and chopped beetroot

Tbh my favourite is just cheddar cheese and onion.

We like bacon and mushrooms (obviously with cheese as well). Sometimes add a red onion.

Prawns in dill mayo with cucumber
Bean chilli and cheese
Hummus and olives

Where are you storing them, and how are you going to reheat them?

Recently I've had, along with salad:
tuna and sweetcorn mayo
cheese and sweetcorn with chilli flakes
hummus
guacamole (I think other dips on this shelf would also work, planning to experiment)
pilchards in tomato sauce, mashed
egg mayo (better with spring onions)
silken tofu mayo

Prawns, mayo and salad cream, avocado. Salt and pepper. Absolutely delicious.

Butter and a soft boiled egg. Or a poached egg (I can't poach eggs, so this is a real treat for me 😄).

Greek yogurt and something spicy, like Patak's Lime Pickle.

This sounds so good

Mexican tuna...tin of tuna and some mayo, add chopped cherry tomatoes, peppers, red onion, kidney beans, some chilli and coriander, squeeze of lime.

Avocado and bacon....very crispy bacon bits with mashed up avocado and mayo

Chilli, goulash, cheese and coleslaw, tuna and cheese, bolognese, ratotouille and feta... I know none of these are groundbreaking but they are goodm

But to answer your question OP, fried mushrooms and onions with bits of frankfurter and then lots of cheese

A Jacket must always have lots of cheese no matter what the topping is
