Interesting jacket potato toppings

I WFH and so bored of the same meals every lunch. I am fortunate to have a Tesco local nearby so can pop in for a meal deal, etc etc.

Today went in and got 10 large baking potato’s for £1!!! I batch cooked them in the oven, and now have many jacket potato’s to reheat…

So what’s your fav “interesting” jacket potato topping.

today I had cottage cheese with chives, and tomorrow it’s tuna and cheese. Not very interesting!

Cook some fish, scoop out the inside of the spud and mix with the fish, creme fraiche, parsley and peas. Scoop back in, grate a bit of cheese on, back in the oven. It’s like a fish pie but far less faffy.

Oh I might do this! Sounds delish!

Butter and a soft boiled egg. Or a poached egg (I can't poach eggs, so this is a real treat for me 😄).

Greek yogurt and something spicy, like Patak's Lime Pickle.

I discovered the lime pickle on my last venture for an interesting lunch! I did poppadoms and one of those mini trays of India starters 😁😁

I miss the work canteen (we don’t have one anymore) somebody else to plan, cook and wash up daily. Yes please!!!

I did the same yesterday op. Batch cooked four while the oven was on, cooled them and scooped out the flesh which I mixed with tomato and basel flavoured soft cheese and some grated parmesan. I laid the skins in a baking tray filled with the potato mix, topped with grated parmesan and mozzarella, put the tray in a large freezer bag.

They can go straight into the oven from frozen this week as a side dish with rosemary & garlic butter steaks and some steamed asparagus, and as a lunch with a nice green salad. 😋

Make up some packet sage and onion stuffing. Scoop the jacket and mash up with the stuffing and some butter. Refill potato halves and bake through till hot.

Glad I am not the only one! I have made the skins super crispy so could do loaded potato skins 🤤🤤

I once improvised a recipe of loaded potato’s skins with Stilton and bacon, with maple syrup drizzled on top. Ooof with a rocket salad, and a jammy boiled egg 🙌 Winner

leftover spag bol or chilli with cheese
diced cooked chicken breast and mayo, drizzle sweet chilli sauce on top then sprinkle some finely sliced spring onion or snipped chives

Or for sweet potato: fry some mushrooms with onion & garlic, add some balsamic vinegar and kidney beans, finish with a dolop of sour cream.or cottage cheese.

Thanks everyone, apart from those who suggested hummus.

For some reason I can’t put hummus with carbs, hummus in a sandwich absolutely not! I can actually feel that clacky texture in my mouth (like peanut butter but worse!) - I will make the exception for a well toasted pitta…

Sour cream and lumpfish roe (basically cheaper caviar)

Otherwise sour cream, cheese and bacon bits.
