I’ve made prawn toasts, Chinese wanton soup (although I bought the wantons themselves) with added kale, ginger, chilli etc. Followed by a salad of shredded coleslaw but with a chilli vinaigrette instead of mayo and our friends are bringing cashew chicken and rice. For pudding I’ve made mini sticky ginger cakes with seared pineapple. I was going to do a mango sorbet with it but ran out of time!
