What's your plan to use up leftover turkey

If you have any turkey left, what's your plans for it? Any tips/recipes you would like to share?

Dh has just made me crusty french bread with butter, cranberry sauce and turkey. I still have loads of turkey left. Bought a Tesco serves 13 turkey for me,dh and dd. I really don't want it to get wasted.

Coronation turkey which is nice in a jacket spud though we had it on rock hard sour dough today!

Slice it all off and freeze in bags. In 3 weeks or so they can have a turkey curry or a turkey stew. ATM it wouldn't be appreciated because we are having roast turkey again for New Year's Day, but in 3 or 4 weeks it will.

A few years ago I made leftovers terrine. Everything in layers. It was gorgeous but I cant find the recipe!

It was bloody lovely! I should have taken a picture... I enjoyed it more than yesterday's dinner. Stress free comfort food in a big bowl.

Dh thinks I'm nuts having a "dinner" 2 days running. He's on cheese, cold meat and crackers.

I'll be making myself the same tomorrow! All hail the air fryer!

We had duck, not turkey, but I had cold duck, pickles and crusty bread yesterday for lunch.

I've just made duck soup which is simmering on the hob, using left over stock from making gravy, and all the remaining meat. I'll add cannellini beans and leftover redcurrent jelly.

I've put the carcase on to simmer with carrot & onion to make more stock for a thick veggie soup for later in the week.

Home made soups make me feel much healthier and seem to help fend off all the winter coughs & colds. Probably down to a lots of veg and fluids. As well as tasting great and costing very little. 🙂

I decided to go ahead with the coronation turkey and was just mixing the whipped cream into the flavoured sauce when the doorbell rang. Nice friend from down the road - 'I've brought you a few slices of cold turkey and ham, you can have a sandwich or whatever you'd like'.

For context, for the last few years I did a vegetarian Christmas dinner and last year, when discussing plans (and declining their very kind offer of lunch with them if I didn't want to be alone) admitted that the one thing I missed was the leftovers.

I thanked her, and put the packet straight in the freezer for later consideration.

Next year maybe I'll get enough beef to have a little roast - I like cold roast beef and can ring the changes on it if I get bored of cold meat. And if a little turkey and ham from down the road turn up, so much the merrier.

The coronation turkey was v nice, btw, but the cats can have what is still around. I've frozen the gravy to have with toad-in-the-hole at some future date, the ham is good for another day or two.

Lovely friend- I'm lucky to live in an area with lots of nice people - I was alone over Christmas, but spoiled for choice if I hadn't wanted to be.

We've now used every scrap of the leftovers and I'm chuffed to bits!

Me and dh had meat, stuffing and the last of the veg and gravy heated in the airfryer last night (he took the mick when I had it the ight before but was jealous when I was eating it!

We've just made 2 turkey and 2 lamb currys for the freezer

The last of the meat has gone into the freezer in an oven tray with gravy, frozen peas and stuffing. I'll pipe mash on when we eat it and it'll be like a Christmas cottage pie!

Usually so much gets thrown out but this year the only thing I've binned is a few green beans!

Had turkey sandwiches from the turkey legs this afternoon with homemade cranberry and stuffing, lettuce and mayo.
Just lots of cheeses and biscuits left but they will keep.
