What's your plan to use up leftover turkey

If you have any turkey left, what's your plans for it? Any tips/recipes you would like to share?

Dh has just made me crusty french bread with butter, cranberry sauce and turkey. I still have loads of turkey left. Bought a Tesco serves 13 turkey for me,dh and dd. I really don't want it to get wasted.

I generally slice a bunch and freeze it for east roast dinner. The rest gets separated into white and dark meat, chopped and frozen. And labelled!

If I can face the effort I'll make stock to go in the freezer too. Turkey soup is actually really nice.

Not turkey but a carvery of 4 meats at ours!

We’ve had sandwiches with cranberry sauce
today dinner is repeat roast
and a mega curry home style from my home town tomorrow !

that’s all the leftovers!

I stripped the carcass yday and made stock, intending to make biryani with the results.
Got up today and discovered that the DSs had got the munchies late last night and eaten most of the leftover meat 😆
Had to go to Tesco to buy extra turkey for the biryani. I think I was the only person buying turkey there today ...

When there are leftovers which is not often in our piggy family, I can't be bothered making pies etc. so I just pulse EVERYTHING roughly in the blender, even cold gravy. So it's ham, turkey, stuffing, roasties, veg whatever. Make patties dipped in egg and breadcrumbs or flour and shallow fry. They don't last long as they can be picked at and I love em too.

I've made this with the leftover Turkey, using roughly the equivalent of 4-5 chicken thighs, works well. I always cook it slower than it says in the recipe tho.

A turkey for 13 when there's only 3 of you? Couldn't the magic still be obtained with a smaller turkey

We'll have some turkey with other leftovers with skinny fries at some point over the next day or two, turkey sandwiches with Brie and cranberry sauce, and anything left after that will be made into a ragu (Jamie Oliver recipe) for a freezer tea one night.

@Ironlights it probably could to be honest. It's definitely a issue I need to look into and work on. Not to derail the thread or bring the mood down. When I was younger my childhood was abusive and I didn't get Christmas presents etc. My dream was to have a tree and Turkey like in the movies.

Sorry for rambling.

Lots of amazing ideas. Looking forward to making some of them.

Seriously though we've just had a second Christmas dinner with all the leftovers. We heated up the turkey in gravy in the oven if was lovely.

We also do bubble and squeak, probably tomorrow with cold cuts and pickles on the side.

Also the epic Christmas toasties of turkey stuffing cranberry sauce and brie!

I bought a big breast roll, almost £30 and nobody liked it.

No idea what to do as no one wants to eat it. Feel awful binning it.

Freeze it.
You can make all sorts of meals for yourself later.

I usually end up making a turkey pot pie with the last bits of turkey, and also some hearty soups like turkey-black bean, turkey-noodle, etc.

And there I was querying the sanity of a 2.5kg chicken for 3 of us!

As a kid I grew up with bubble & squeak with leftover meat and a chutney on a Monday after a Sunday roast.

Tonight some of our chicken went into a pie with pre-fried leeks and pancetta (and a bit of elderly frozen sweetcorn). The pie sauce was a tin of Campbells condensed chicken soup (added milk and water to get to the right consistency), some random herbs, a splash of wine and ready made shortcrust pastry and egg wash on top.

Tomorrow I think I'll probably chop some up with black beans in a veg-heavy tomato sauce and make enchilladas.

Other times I buy a bag of "Spanish-style" ready cooked grains/rice and lob it in with some prawns and diced pepper/peas/sweetcorn (or cook paella rice in some stock).

If you are coming down with colds I favour the spicy noodle chicken soups route with shredded meat, julienned/grated carrots/ripped or thinly sliced green veg (plenty of grated ginger, garlic and chilli seems to help with head colds).

In your position I would figure out whether you want slices/ripped/chunks and freeze in portion-sized/named bags.

We had chicken instead of turkey and had a lovely chicken and pea risotto tonight- sure you could do the same with turkey

I have made a rice dish with white rice but it’s not like a risotto as it won’t go creamy. Will still be nice though, more of a pilaff?

No. Don't. It'll be horrible. I know through this rookie error. Better to make a turkey fricassee.

Of you only have ordinary rice, you could make turkey fried rice, instead of chicken fried rice.

I was thinking Coronation turkey to morrow, but am now wondering about feeding it to the cats. otoh, the leftover ham was lovely and I'm looking forward to having more of it.
