No official starter, nibbles etc smoked salmon canapés

Turkey, Roast ham, stuffing, pigs in blankets, gravy - brother is the butcher so will do meats
Roast potatoes & Parsnips
Sprouts with chestnuts and pancetta
Carrots & swede - mashed before my mum notices
Braised Red cabbage & cranberries- trialling this now and if good will freeze til Xmas eve otherwise just cranberry sauce.
Bread sauce.

Xmas pud with sweet white nutmeg sauce/cream
Trifle

Cheese, fruit & biscuits later if wanted

Drinks of choice, wine, beer, bubbles, port etc

8 of us, dinner is at our parents, going home we divide up the leftovers so mum & dad not left overwhelmed with food.

Followed by a winter bombe baked Alaska type thing as Christmas pudding isn’t very popular here.

On my plate

I only eat green veg, everyone else will have cauliflower carrots swede parsnips red cabbage stuffing bread sauce

Beef rib, roast potatoes, Yorkshire puddings, cauliflower cheese, honeyed carrots and baked broccoli. I shall also have a plate of pigs in blankets on the table, because it's the law. Also roast chestnuts wrapped in smoked streaky bacon. Xmas pud or cheesecake for dessert.

So interesting how these differ. I think I always presumed there was one set combination of dishes! We would never have peas, cabbage, broccoli or Yorkshire puddings, for example.
In my family we've always had:

Turkey or chicken
Veggie sausages for me, have tried various recipes over the years including a rather complicated Ottelenghi aubergine thing and realised I'm perfectly happy with just some veggie sausages.
Roast potatoes and parsnips
Boiled carrots and sprouts
2x Stuffing (no sausage meat, one sage and onion, one lemon and thyme)
Pigs in blankets
Gravy, cranberry sauce and bread sauce (all homemade)
My mum's Christmas pudding made with a recipe that's probably getting on for 100 years old. Very light, as Christmas pudding goes! It's made with carrot and apple. Served with white sauce.

Non-British DH finds it all very puzzling but quite enjoys it.
I'm looking forward to it now!

I use Gordon Ramsay’s timings for it - here.

I get it ready on Christmas Eve - I pull out the loose pads of fat in the cavity, and prick it all over with a sharp fork, so the fat renders out when it roasts. The loose fat gets rendered down (heated in a pan until it melts), then I use that, and the fat from the roasting tin, for the roast potatoes and parsnips.

I drain the fat out of the pan part way through the cooking time too - that helps, I think.

I make gravy, because dh and the dses like gravy (my mum thought gravy was an invention of the devil, so I grew up without it, and only want a tiny bit now), and bread sauce because I can’t have Christmas dinner without it, and spiced apple sauce to cut the fattiness of the meat.

Thank you for the tips, have filed that away! Spiced apple sauce sounds delightful as well.
