What’s For Dinner?

Think DH is doing his sausage pasta with tinned tomatoes, onion, garlic & chilli powder. It was posted somewhere as a basic student dish but has become one of our favs.

I’m having mushroom and capellini stroganoff.
The carnivores are having burgers and chips.

Veggie Chilli - first time, smells amazing.

Dr Rupy's Halloumi Bake which is made with butternut squash, Courgette, kidney beans, etc. I'm proud to have resisted the siren call of the Wednesday evening fish and chip van for once 😁.

Takeaway tonight. I just cannot be bothered today!

Steamed veg with some beige freezer food, it’s one of those days!

Spaghetti Carbonara as I've obtained some proper guanciale - amazed what a difference it makes.

We're having pork chops tonight. I might make a really buttery mash to go with them too.

Beans on toast with a poached egg on top.

Midweek roast chicken followed by chocolate mousse.

Midweek roast chicken with roast potatoes, roast carrots, parsnips, peas and cabbage. And lots of gravy.

Pasta with loads of veggies and a sprinkling of chorizo for us. Homemade parkin for afters.

Spanish chicken and parmentier potatos. I actually had it as a ready meal a couple of years back and it was really nice but also I thought probably simple to make myself. Which it was. It's now become a bit of a family favourite.

Shepherds pie

Thai red curry with Salmon & coconut rice

Me: Pitta bread stuffed with roasted vegetables and feta, which then gets baked in the oven until it's crispy on top and melty in the middle. Served with avocado salad.

DH: As above but added chicken in the pitta and fries instead of avocado salad.

DD (age 3): Baked pitta bread fingers (topped with tomato puree and cheese), poached egg, sweetcorn and avocado.

It's a real hoot preparing three variations of the same meal!
