Think DH is doing his sausage pasta with tinned tomatoes, onion, garlic & chilli powder. It was posted somewhere as a basic student dish but has become one of our favs.

Chicken and smoked bacon with rice and bean mix:

Boneless chicken thighs marinated in a paste of lime juice/paprika/garlic/chili/tandoori powder and chucked in slow cooker earlier so already done (and plenty left over to go with salad / pasta / potatoes etc over next couple of days)

Rice mix - chopped up peppers and onions simmered until soft in garlic and chili, add a couple of tins of taco beans / mixed beans / whatever is in cupboard, also tinned chopped tomatoes. When all is bubbling away stir in a couple of packs of already microwaved rice. Leave to simmer for a bit.

When almost ready to service grill a couple of rashers of bacon for each person and chop into bits onto the top of their meal.

I made a recipe I’d seen on TikTok tonight. Sausages, pancetta, leeks, celery and garlic cooked in cider, served with mashed potatoes and topped with apples cooked in honey and mustard.

It was a bit too liquid-y but otherwise very tasty and perfect for a stormy night.

loving the inspiration from this thread. I made japanese mushroom rice. brown shortgrain rice grains fried with onion, ginger and garlic (also I added minced beef) then cooked in a dried shiitake broth (I just soaked a few shiitake mushrooms in boiling water for 30 mins). when it's almost done I added sliced fresh shiitake, small diced carrot and sugar snap peas. served with a spicy gochujang, tamari, sugar and sesame oil sauce and a soft boiled egg. this is one of my favourite comfort foods. even better with some soya pickles

trying a belly pork thing with noodles from sainsburys. DH thinks it will be fatty.

We were out at lunchtime so I just made a really basic chowder. Two pieces of bacon left over from breakfast with shallot, a bannisters farm frozen jacket potato because I thought that would have more taste than the only other choice I had, baby new potatoes. Frozen sweetcorn, stock, milk, salt and pepper.

It was lovely for something so quick and cheap.
